A delicious afternoon treat that took me almost an hour to eat. Yea for cutting things up into small pieces!
Yesterday’s meal prep really paid off tonight – dinner was on the table in no time.
Brown Rice Burritos!
This delicious burrito contains
- whole wheat tortilla
- spinach
- tomato
- Mexican Brown Rice
- black beans
- cheddar cheese
- Wholly Guacamole
I had two of these.
Now why do I feel like Popeye today….well all three of my meals today contained spinach!

September 14, 2009: Reduce usage of plastic sandwich bags or reuse them
I found this interesting article about plastic bags. Although it primarily focuses on plastic shopping bags, I’m assuming that a lot of the same information applies. Plastic sandwich bags are probably made from petroleum which has a whole host of environmental problems. Furthermore, they are thrown away and take up space in a landfill or are carried by wind to the ocean where they kill aquatic life. A bad story all around. I don’t use plastic sandwich bags all that much, but when I do, I want to make every effort to reuse them a few times before throwing them out.
I felt like MacGyver tonight as I created my own baggie drying rack. Voila
That’s an old glass jar (reusing) with two chopsticks I found in my drawer.
Look how well it holds a sandwich bag.
Not only is this green, it saves me money too!
Ok – I see an early night in my future. I’m fighting a cold!

I have plastic baggies drying all over my kitchen! I learned that from my mom. It’s easy to do, but also easy to forget to do!
I can see it would be easy to forget to wash them – we are so conditioned to just toss them! Many times they just held crackers or cookies though – what a waste to just throw them away.
The apple-craisin-cheddar combo was great – I have been doing apple and cheddar for long time but the craisins made a great addition!
