Steamed Broccoli

I tried something new in the cafeteria today – steaming my own broccoli.  I am always amazed at how un-green the cafeteria broccoli is.  I decided to take matters into my own hand and steam some in the microwave.  I put some broccoli from the salad bar in a bowl and added a little water; I then covered it with another bowl and microwaved it for about 1 minute and 10 seconds.  Perfectly steamed broccoli.

Along with my broccoli, I enjoyed:

  • 1/2 a sweet potato
  • Spinach
  • tomato
  • 3 Spinach ravioli

November 3, 2009 009Amazing!  You will be seeing more steamed broccoli in my cafeteria future.  A very fall looking lunch – lots of orange! 

Unfortunately, this lunch is not holding me over too well.  I have been snacking on some raisins and now I’m breaking into my planned afternoon snack (a little early considering that I am here until at least 6:30 pm tonight).

November 3, 2009 011 I know I know – how wasteful.  I feel bad drinking it.  I can explain.  I am going to a conference next week in Hartford, CT (anyone want to Guest Blog?!?) and I am looking for healthy snacks I can bring with me.  These do not need to be refrigerated (although they probably taste better cold) and would be a great snack/something not too bad for me to have in my bag.  The nutritionals are not the best – but they aren’t too bad

November 3, 2009 012A little high in sodium but its got calcium, Vitamin D and protein.  

I wanted to sample one today before I brought it to above mentioned conference.  It was much better than I anticipated – not something I would buy regularly (they are pricey), but for a pinch, its great.

What are some healthy snacks (no nuts please) that travel well and don’t need refrigeration?

This is something I might give a try. They have a steamed option at my school, but it always seems to taste terrible/unnatural!

Way to improvise with the broccoli!

I don’t have any super original ideas for snacks, but I always have dried cherries, apricots, and granola on hand for days on the run.

Sometimes you have to take matters into your own hands. The broccoli looks fab!

I like dried fruit, homemade crackers and cheese, and wraps for travel foods.
