As the semester goes on, I am getting sicker and sicker of the salad bar – plus one look at it today and the vegetables looked less than stellar. I put my creative cap on and came up with an exciting new sandwich Chickpea Grilled Cheese.
First I toasted two pieces of whole wheat bread (which I had to go buy two more pieces of bread because first two looked like charcoal after a run through the toaster). Next, I mashed some chickpeas and added a little honey mustard salad dressing to bind the mash together. Lastly, I layered the chickpeas, two slices of Swiss Cheese and some tomato slices on the bread and microwaved the sandwich until the cheese melted.
OMG this was delicious. I loved all the flavors and textures. Very simple and easy to make – plus it isn’t too bad for me. I want to try this next with black beans and maybe some salsa…the possibilities are endless!
For dessert, I had a pretty decent sweet potato mashed with a little butter.
I ended up eating about 3/4 of the sweet potato – I had to get some veggies in!

GREAT idea! I don’t really eat sandwiches a lot because I’ve yet to find a good gluten free bread (I try to stay away from gluten, the whole bloating thing…). I think this would be a great wrap though, with the cheese and chickpeas, yum!
The sandwich sounds great! I have a can of chickpeas in the pantry. I’m going totry this soon!
Chickpea grilled cheese=genius! I’ve had a grilled cheese with hummus on it, but I think I like the idea of the chunky chickpeas better!
