After pacing the cafeteria a few times I decided on an old standby of mine – Cheese Tortellini salad.
In my salad was Romaine Lettuce, Spinach, Onion, Tomato, Red Pepper and Mushrooms plus 1/4 of a meager sweet potato (could have used and extra 5 minutes in the oven).
I added some tortellini for a different flavor.
Now you wonder why I only add a few tortellini to my salad – well look at the bath they are taking
Yikes. That cannot be good for me. Before adding them to my salad, I tap each piece on the side of the plate to try to get rid of the extra butter and oil. I also only ask for one scoop – sometimes the cafeteria workers don’t listen though. The butter/oil that still remains after a few good taps becomes my salad dressing.
I also got a bowl of Pasta Fagioli soup which I ate 2 bites of because 1) it was extremely smoky and 2) it has large pieces of celery. Celery, in soup, should be finely minced in my opinion.
Before my run this afternoon, my tummy started to rumble so I had 1 bar of this(2 come in each package)

I think that says it all.
I did my normal Tuesday run today outside this afternoon – 5-6 long hills at a 5k pace. While running I realized how much I have missed my daily runs – I’m glad I am back on the bandwagon.
Off to a meeting.

Wow, that is a lot of butter! But great idea to drain it a bit, and use it on a salad – yum!
Mm, yummy looking greasy tortellinis! A little extra butter and oil isn’t gonna hurt you, obviously, but when adding it to a salad all that extra oil can ruin it! So, I know what you mean.

I’m with you on the celery. They could leave it out as far as I’m concerned.

I hate when stuff is covered in butter, ugh! I am the queen of taking my napkin and soaking things up. I blame it on my stomach but honestly even if I had no stomach problems at all I’d probably do that.
Might have to try those granola bars, did you get them at Whole Foods?
Hi Kelly – I got them at Shaw’s in the Natural Food’s Section – I bet you could find them at Whole Foods though!
I’m not a fan of celery either in my soup Melissa – it has to be so fine I don’t even know it is there!
