Change In Plans
This afternoon I had the rest of my apple from my breakfast this morning.
Matt and I planned on having a frittata for dinner. Instead, we had some leftovers. For work today, Matt had to prepare a pasta dish for a pot luck lunch. We found a recipe in one of our crock pot books that seemed simple and not too time consuming to prepare.
In the crock pot went some jarred marinara sauce, rigatoni and sweet turkey sausage. He doubled the recipe so there were a lot of leftovers. Instead of throwing them out, we ate them for dinner!
I don’t normally don’t like sausage. Period. This on the other wasn’t too bad – the sausage was sweet enough that it didn’t have that icky sausage taste.
I would never request this meal but for tonight it was just fine.
My 4 mile run this afternoon was good – it was unseasonably warm. I am moving my Saturday run to tomorrow – Saturday Matt and I are flying to North Carolina early in the morning. Saturday afternoon, some AMAZING friends of mine from grad school are coming to visit – I cannot wait!

I bet that crock pot recipe would be great with some veggie sausage thrown in towards the end of the cooking time. We have a crock pot and I have a hard time finding vegetarian recipes. I’ll try this out!
