Turkey Take Two

Remember my turkey club sandwich for lunch?  Well tonight’s dinner included homemade Turkey Soup.  I opened our bedroom door this morning and could smell this soup cooking up on the stove – my Mom makes soup stock from scratch so this soup is amazing; puts canned stuff to shame.

November 23, 2009 009 This afternoon I did some baking for Tina’s Eggland’s Best Eggs Holiday Recipe Contest.  I like to give baked goods for holiday gifts; this bread would be perfect for breakfast or for dessert as we had it tonight.  I present to you…

Choco-Puddin Banana Bread

Ingredients:

  • 1 cup sugar
  • 3-4 mashed bananas (approximately 1 1/2 cups)
  • 1/4 cup Canola Oil
  • 1/4 cup unsweetened apple sauce
  • 2 Eggland’s Best Eggs plus 2 Eggland’s Best Egg Whites
  • 1 1/2 cup Whole Wheat Pastry Flour
  • 1 1/2 cup White flour
  • 1 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 cup prepared instant chocolate pudding (made with 1 cup of milk instead of 2)
  • Optional:  add a few chocolate chips!

Directions:

  1. Preheat oven to 350 degrees
  2. Combine first 5 ingredients in large bowl – stir together with a whisk.
  3. Combine remaining ingredients (minus pudding) together in a separate bowl.
  4. Slowly add dry ingredients to wet ingredients and stir just until combined.
  5. In a separate bowl mix pudding with a small amount of bread batter.
  6. In a large bread pan (sprayed with cooking spray), layer bread batter and pudding/bread batter mix until both are gone.  Take a knife and swirl the batter together multiple times.
  7. Bake for about 1 hour and 15 minutes or until cake tester comes out clean. 

(I have a feeling this could be made into two smaller bread pans)

that SOUP and bread looks delish! could be the best chicken soup ive seen!

I have never thought about putting pudding in bread! I will experiment with that one! Thanks for the idea!

That soup looks SO good, especially since it’s a dreary morning in Boston. I don’t make homemade gifts because I’m not that crafty or that good at baking. But perhaps someday!
