Full of Fruit

My school work sadly prevented me from viewing the Superbowl commercials last night.  I apologize for my lack of blogging but I didn’t spend much time away from my books and paper yesterday.  Don’t worry – I will give you a full report soon enough – my chili was great (not too toot my own horn or anything…)

This morning I woke up at 5:45 am – not to workout – but to do some more school work.  I will be very thankful when this group project is over.

I started my breakfast with a Double Chocolate Dream Vitatop that the company sent me to sample.  I warmed the frozen vitatop in the microwave and then topped it with a smear of soy nut buter

Oh my this vitatop was amazing.  The chocolate was fudgy and not dry – they key is to microwave the top in the plastic bag – that way the moisture doesn’t get out.

Next up, my Matt- made smoothie.  In mix was:

  • 6 oz frozen berry mix
  • 3 oz blueberries
  • 1 banana
  • 6 oz POM Wonderful juice

IMG_5733 I’m hoping all the fruit and antioxidants in this smoothie will keep me energized – it is definitely a tart one!

Breakfast Take 2

I’ve been so productive already – my first load of laundry is in the dryer and I created my Super Bowl dinner prep schedule.  I decided to try to make Kamut in the microwave for breakfast – that was a bad idea.  I found a Kamut eruption in my microwave and sadly resorted to breakfast number 2.

IMG_5719Soon it will be time to get my chili in the crockpot and start working on a dip for vegetables.  I also have a lot of school work to finish.  Matt is at work until around 3:30 pm so at least I have a quiet apartment.

Craft Two

After leaving for the grocery store WAY later than I anticipated, Matt and I realized that to make it home and make dinner would have us eating around 8 pm – that is too late for me.

Qdoba was near one of our errand stops, so we parked ourselves there (plus we had a coupon for a free entree).

I chose a new option – craft 2 from the menu – smaller portions for a fixed price.  Solved my problem – I couldn’t decide between a quesadilla and a taco salad.  With this option, I got both!

IMG_5715 I got a steak quesadilla and taco salad – I promise there is more than cheese and guacamole on there.  Underneath there is corn and black bean salad and salsa.  I asked her for a “little” cheese; I wonder what a normal serving is.

We finished our errands and now it is time to get some reading in before bed.  Matt has to work tomorrow and I have my group project to tackle…then its Super Bowl  commercial watching time.

Mid-Afternoon Lunch

We just finished “lunch” – after having breakfast at 11:30 am, we both weren’t hungry until almost 3 pm. 

I had just finished cleaning the bathroom and doing some laundry so it seemed like a great time to eat.

Matt and I did some work this morning organizing our freezers and pantry so we found some treasures for lunch today – I had a Gardenburger patty on a deli flat with some swiss cheese and mixed greens.  On the side, some carrot

A trip to the grocery store is in our imminent future.   I have made a detailed list in an effort to stop buying things we don’t need.

Reliving Memories

This morning, as snow flurries are flying outside our window, Matt and I decided to make Disney World inspired pancakes.  Seeing as it was cold enough for snow while we were there a few weeks ago, we thought today was the perfect day to break out our new cookie cutter.

Using Hodgson Mill Instabake, Matt made pancakes substituting applesauce for the oil called for in the recipe.

On our skillet, Matt poured some pancake mix into the Mickey cookie cutter.  The first one was a little fat – but delicious nonetheless

I am on the road to recovery today – slept well last night and although am still congested, am feeling slightly better.  Matt and I have some cleaning to do and then a trip to the grocery store.  Sadly, I decided not to attend the Blogger dinner in Boston tonight – I need to get better so I can work on my group project tomorrow!  Rest and reading are on the agenda for tonight. 

I am so glad we are not a part of the winter storm that is hitting our south – we’ve had enough snow this winter!

Not Feeling a Salad

This afternoon I paced the cafeteria debating what to have for lunch today.  I was highly disappointed to see the soups were Creamy Tomato and New England Clam Chowder – too much cream for me.

Uncomplicated Cereal

This morning I had no idea what to have for breakfast.  My cold, which I was hoping would have dissipated a little, has gotten worse – I guess the massive amounts of Vitamin C I have been consuming hasn’t helped me that much.  I just wanted to eat breakfast – nothing too complicated.  Cereal sounded perfect.

IMG_5701 In the bowl was Kashi Island Vanilla, Quaker Oatmeal Squares, Kamut Puffs, and Cascadian Farms Multi Grain Squares.  Plus a banana and some skim milk.

Sweet and Salty

I love sweet potatoes – I really do.  They make such a delicious salad topping and today was no different. 

The usual:

February 4, 2010 002I ate at my desk for the third day in a row – a habit I need to break.  I also got some sort of soup – I feel a cold coming on strong and I was hoping the soup would send it packing.  I ate one bite and realized the soup tasted slimy.  I put my spoon down.

After lunch I needed something to munch on – look at what I found

February 4, 2010 003This bag has only 130 calories – a great dessert/snack to munch on.  I love kettlecorn.  I definitely see this being a frequent treat.

I just ate a Stonyfield Farm Blueberry yogurt – although the fruit flavors are not my favorite, they are the only kind they sell upstairs.  Since I can buy them on my meal plan, they fit my budget.

3 Square Meals

Sorry for my lack of posting yesterday – after back to back to back meetings, I went for a 3 mile run and then came home to put my nose in my textbook.  I did a lot of reading and still have some to do before my group meeting tonight.

Lunch yesterday was consumed at my desk in between meetings. 

I started off with a Veggie sandwich – Whole Wheat bread, two pieces of swiss cheese, spinach, tomato and cucumber

IMG_5683With my veggie sandwich, I had two hard boiled egg whites and some carrots and red pepper from the salad bar.

IMG_5681 I had a great 3 mile run – really cleared my head after the marathon of meetings.  It wasn’t too cold out and thankfully the snow from the morning had melted.

I came home and Matt made dinner while I was in the shower.  Whole Food’s Salmon Burgers on a Deli Flat with mixed greens and tomato
