I arrived home from Boston late this afternoon. I had a great time and was able to catch up with some old friends and even meet a reader (hi Kristen!).
On my way home, I was thinking about waffles – really maple syrup.
I searched some recipes online and then created my own. Knowing that very little fruit, vegetables and whole grains were consumed today, I wanted to do my best to fix that.
Here is the recipe:
- 1 cup whole wheat flour
- 1 cup oat flour (I processed 1 1/4 cups of oatmeal in my mini chop food processor)
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 tablespoons maple syrup
- 2 egg whites
- 1 1/2 cups skim milk
- 2 tablespoons applesauce
- 1 teaspoon vanilla extract
- 3 tablespoons cooked quinoa
Combine the dry ingredients and set aside. Mix the wet ingredients and add to the dry. Mix and then stir in quinoa.
Pour batter onto hot waffle maker (sprayed with cooking spray) and cook until golden brown.

You may ask…quinoa in waffles!?! Well I had some already cooked and decided to throw it in…you really couldn’t taste it but boy did these waffles fill me up!
I ate two waffles with a little maple syrup. These waffles are not sweet but with the addition of the syrup were perfect. The quinoa adds a little protein punch.
With my waffles, I had some fruit – had to fix that deficit today!
Time to settle on the couch and finish a lot of reading. I got very little accomplished yesterday and am now a little behind…
