Amazing Panini

I went out on a limb today and tried a new panini – I was a bit hesitant because I wasn’t sure if it was going to be spicy or not.  I am so glad I tried it though.  I’m going to get it again tomorrow.

February 18, 2010 001Vegetarian taco panini – refried beans, black beans, rice and cheese.  I microwaved it for 30 seconds to make sure it was nice and hot – our paninis are known for not being cooked through.

I loved the flavors of this.  I am definitely going to be recreating it at home – so simple and easy – and if I recreate it, I can use brown rice for a little extra nutrition!

February 18, 2010 004A little sample plate of some veggies.  Knowing what I am going to have for dinner, I always try to diversify my lunch veggies – that way I am getting more nutrients. 

I had plans for a run this afternoon; sadly it isn’t going to happen.  I hit my foot on the corner of the coffee table this morning – the same spot I had surgery a few years ago.  It is on the top of my foot and I am getting a NICE bruise and bump.  I’m wearing my Crocs right now and they even hurt. The thought of a tied sneaker on my foot is not appealing right now. 

I will ice it tonight with the hopes that the swelling goes down. 

Always something…

:( Hope the foot feels better soon. At least you had the tastiest looking panini. I’m not jealous of the bruise, but I’m jealous of the meal!
