Yesterday in our CSA share, there were a few apples – Marie said they were a little tart but still delicious.
The rain is still pouring down in Massachusetts – I’m not complaining – we do need it. But, the weather screamed oatmeal again. I put on my thinking cap and remembered the Baked Apple Pie Oatmeal I made last fall inspired by Kristen.
I followed the instructions this time and diced 1 apple and microwaved it for 1 minute. To the bowl I added 1/3 cup of oatmeal and 2/3 cup water. I then added about 3 teaspoons brown sugar.
In a preheated 375 degree oven it went for 20 minutes while I took a shower and started getting ready for work.
I walked into the kitchen just as the timer was going off – perfect – plus the smell was delightful.
After looking at my breakfast for a minute, I decided to dice up some cheddar cheese and add it to the top to give it some protein. I love the apple and cheddar cheese combo. Who also doesn’t love savory and sweet?
I stirred all the cheese in and it got all melty and delicious. This bowl of oats was amazing and will hopefully keep me full for a few hours.
Green Tip of the Day: Clean your windows this weekend with a simple solution of 2 cups water, 1/4 cup vinegar, and a squirt of liquid soap. Put it in a clean spray bottle; spray the windows; wipe off with a cloth or newspaper.

That breakfast looks like one for a special treat, but its so simple and healthy. I am thinking about oatmeal today too. We need this rain, but it hasn’t stopped in 48 hours! Makes me want to crawl back in bed and pull up the covers
