Avocado-ummus

This afternoon I returned home from work starving.  I knew I had a date with the treadmill, so I ate what I thought was a small snack.

I changed into running clothes and walked over to the gym.  You remember the rule no swimming until 30 minutes after you eat.  Well, for me, that should apply for running.  I felt nauseous the entire time I tried to run.  I slowed down but still felt sick so I just gave up – oh well, that just means a longer run for tomorrow.

After a shower, I realized I wasn’t really in the mood for another Twice Baked Acorn Squash. 

Week after week, I read Broccolihut’s amazing blog and drool over her hummus. 

Being allergic to tahini, it is almost impossible for me to buy hummus at the store – I need to make it myself.  With a shorter day at work today, I decided to whip up a batch of tasty hummus for myself and boy was it worth it.

In my food processor went:

  • 1 can of chickpeas (about 1/2 liquid drained out)
  • juice of one lemon
  • 3 cloves of garlic I minced and sautéed briefly in olive oil
  • about a tablespoon of Olive oil (drizzled in as the food processor was doing its thing)
  • 1 avocado
  • sprinkling of salt

Presto – delicious hummus!

I enjoyed my dinner hummus smeared on 1/2 a toasted Whole Wheat Pepperidge Farm Deli Flat and with some carrots.

December 30, 2009 008Perfect meal to end a not so perfect run. 

I am trying to catch up on blogs – it is taking me so long.  I have been reading for almost an hour and don’t feel like I have made much of a dent (plus I may have done a little reading at work today too…). 

Time to fold some laundry – still catching up on it from our trip last week.

I agree, we need to make up a rule on not eating before running. I get so sick when I do that too. I have to wait at least an hour and by that point I’m too lazy to get off the couch :)
Hummas looks amazing by the way.

I’ve had runs like that, where my tummy is just not up for it. It’s disappointing.

I’m still catching up on blogs too. And I’m going away again today so I will be behind again. Oh well….I’m glad I saw this post because it reminded me I want to try making my own hummus. So, so good!
