This afternoon flew by – I was in meetings from 2 pm almost through 6:00 pm. Sorry I wasn’t able to get an afternoon post up, but my job, not blogging, pays the bills.
This afternoon I got creative with a little tuna salad from the deli. Loaded with mayo, I attempted to make a healthier tuna sandwich. Here’s the story:
Asked for a wrap with two slices of swiss cheese and one scoop of tuna salad from the deli. Then I went to the salad bar and made myself a salad with cucumber, spinach, red peppers, tuna and chickpeas. I cut all that up on my plate and scraped off some of the tuna from the deli to add to the salad on my plate. The mayo in the deli tuna was enough to “dress” the salad. I then added it all to my wrap and rolled it up!
My attempt was successful – a great, healthier version of tuna salad. I got some veggies in and ate only 1/3 of the tuna from the deli. Just to give you an idea, here is the tuna that I scraped off the wrap
I love these salads in a wrap – I feel less like I’m eating a boring salad and more like I’m eating an exciting sandwich. Interestingly, I’m really just eating a salad (and a wrap).
After driving home in a surprise snow squall, I quickly transformed last night’s Simple Bean Burgers into a delicious taco! I mashed one of the leftover burgers in a small bowl and added salsa until the mixture combined nicely. I heated that up in the microwave and then made a taco with one slice of cheddar cheese, sour cream, lettuce, and tomato
This was heavenly. The black bean burger, with the addition of the salsa, was full of flavor. This was a great taco and much better than last week’s tofu taco disaster.
For dessert, I finished up a little bit of Edy’s Slow Churned Mint Chocolate Chip Cup – there was less than 1/2 of the cup left.
Well I need to finish some laundry and pack my stuff up – a big trip to New Jersey tomorrow!

mm, I love Edy’s slow churned ice cream!
I also loe your wrap creation. I used to do stuff like that, order something from behind the line, then add more at the salad bar. I love putting tuna in my wraps.
