Bean Concoction

I have been eyeing these beans on Iowa Girl Eat’s Website for a few days as I absolutely love beans and am always looking for new, creative ways to turn them into a meal. 

Last night, I took my can of cannellini beans, rinsed the beans and mashed them with my potato masher.  To that mixture I added the juice of 1/2 a lemon and some minced garlic that I sautéed in a skillet for a few minutes.  I sampled a few bites and enjoyed the flavor – not too strong, yet not bland. 

Like Iowa Girl, I mixed in some diced cherry tomatoes and had this bean concoction on a Whole Wheat bagel for lunch today – I added a slice of cheese for some Run Lean Green flare.  I also wanted to mention that I took out some of the “innerds” of the bagel – it was too big to eat for lunch!

I will say, I think this bean concoction is too delicate for the bagel – all I really tasted was bagel.  I would like to try this either with pita chips or as a dip for some veggies. 

I need to get movin!  I have a meeting at another school in a little bit.  The day has been so busy – I hate the first day back from vacation.
