Calling All Vegetables

All the vegetables in the RunLeanGreen fridge (and countertop) were used in tonight’s delightful dinner.

I’m a single lady right now as Matt is in NJ for a few days visiting his family, so I decided to go CRAZY tonight and eat a whole lot of vegetables (and buy two pairs of shoes).  Components of tonight’s crazy dinner include:

  • Spaghetti Squash – cooked in the microwave for 15 minutes and then I shredded the guts out of it.
  • Peas – defrosted and warmed up in the microwave for a little over a minute.
  • Broccoli – also steamed in the microwave
  • Cherry Tomatoes – diced up
  • Spinach – went right from container to bowl
  • Scallions – cut up from frittata this weekend – went straight into bowl
  • Cheddar Cheese – shredded by yours truly

November 5, 2009 018 I ate another plateful of this dinner and still have enough for an entire meal (Sneak Peak – tomorrow’s dinner).

For dessert, I enjoyed some Oikos Vanilla Greek Yogurt with granola and chocolate chips (it is dessert)

Do you have leftovers?!?!

That looks like such a healthy and tasty dinner. Enjoy Grey’s! I’m so far behind on episodes this season.

Your dinner looks fabulous. Spaghetti squash is great for leftovers isn’t it?!

Spaghetti squash has been my greatest find this past year. I just love it. I’m working on making the husband like it too…..

I’m a week behind on Grey’s. Just watched last week’s episode yesterday.

Yeah for spaghetti squash!!! It’s just too good. I’m going to be so sad when it’s not in season anymore :(
