<p>The warm temperatures last week put me in the mood for salads.</p>
<p>I found a way to <em><a href="http://www.theburlapbag.com/2012/03/make-hard-boiled-eggs-in-the-oven/" target="_blank">bake eggs</a></em> to make them hard boiled.&#160; Excuse me?&#160; Bake them?&#160; </p>
<p>Why yes…and it couldn’t be simpler.</p>

<p>Pre-heat your oven to 325-350 and place as many eggs as you want in a mini muffin tin.&#160; Cook for about 30 minutes. </p>
<p>That’s it.</p>

<p>Guess what?</p>
<p>The eggs taste like hard boiled eggs!</p>

<p>It would be great to hard boil your eggs when cooking something else in the oven – they mini muffin tin doesn’t take up a lot of space.&#160; </p>
<p>Perhaps roasting some vegetables for the week?&#160; Nothing like doing double the work in half the time!&#160; Baking your eggs would also be great when you need a lot of them – I don’t know about you, but getting a big pot of water to boil on my stove takes forever.&#160; This would probably take less time!</p>

<h4>Ingredients</h4>
<p>1 3/4 c oats</p>
<p>3 egg whites</p>
<p>3/4 cup unsweetened cocoa</p>
<p>1/2 cup semi-sweet chocolate chips</p>
<p>1/2 cup unsweetened applesauce</p>
<p>1 tsp. vanilla extract</p>
<p>1/2 cup plain Greek yogurt (or regular plain low fat yogurt)</p>
<p>1/2 tsp cream of tartar (or 1-1/2 Tbsp. vinegar)</p>
<p>1-1/2 tsp. baking powder</p>
<p>1-1/2 tsp. baking soda</p>
<p>1/4 tsp. salt</p>
<p>1 cup hot water</p>
<p>1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tbs stevia</p>
<p>Preheat oven to 350 degrees. Line 2 (12-cup) muffin pans with foil cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.</p>
<p>In a blender, (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.</p>
<p>Place mixture in a bowl and gently stir in chocolate chips. Scoop into prepared muffin pans.</p>
<p>Place in oven and bake for 10-12 minutes or until toothpick comes out clean. Cool before removing muffins from pan.</p>
<p>Servings: 24 muffins</p>
<p>85 calories per muffin (5g fiber, 5 protein, 21 g carbs, 1g sugar)</p>
<ul>
<li>1 3/4 c oats </li>

<li>*Foil cupcake liners, remove the inner paper lining (I say foil, because from experience, paper liners tend to stick to muffins!)</li>
</ul>
<h4>Method</h4>
<ol>
<li>Preheat oven to 350 degrees. Line 2 (12-cup) muffin pans with foil cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside. </li>
<li>In a blender, (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth. </li>
<li>Place mixture in a bowl and gently stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans. </li>
<li>Place muffins tins in the oven for 10 minutes. After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half of the chocolate chips on top of each muffin. </li>
<li>Place the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean. <em>*Note, you could skip this step by putting all of the chips in the batter, and baking the muffins for 12-15 min straight, but this method gives the muffins the traditional ‘VitaTop Muffin’ look with the chocolate chips on top!</em></li>
<li>Cool muffins before removing from pan. ENJOY!!</li>

<p>I had some issues with the baking of these muffins – mine were probably in the oven for about 40 minutes until they reached the level of “minimally raw.”&#160; That could be my oven or something else.</p>

<p>If I make these again, I would reduce the amount of hot water to 1/2 a cup and add water as needed.&#160; The batter was WAY too watery.</p>

<p>These tasted more like a cupcake then a muffin – which didn’t upset me too much.&#160; </p>
<p>I bet topped with some nut butter these would be heavenly. </p>
<p>The remaining muffins are now in my freezer for when I need a quick breakfast or dessert.&#160; I bet they don’t last long.</p>

<h4>Ingredients</h4>
<ul>
<li>4 3/4 ounces all-purpose flour, approximately 1 cup </li>
<li>4 3/4 ounces whole-wheat flour, approximately 1 cup </li>
<li>1/2 teaspoon baking soda </li>
<li>1 teaspoon baking powder </li>
<li>1 teaspoon salt </li>
<li>3 tablespoons sugar </li>
<li>3 whole eggs, beaten </li>
<li>2 ounces unsalted butter, melted </li>
<li>16 ounces buttermilk, room temperature </li>
<li>Vegetable spray, for waffle iron </li>
</ul>
<h4>Directions</h4>
<p>Preheat waffle iron according to manufacturer&#8217;s directions.</p>
<p>In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.</p>
<p>Ladle the recommended amount of waffle batter onto the iron according to the manufacturer&#8217;s recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.</p>

<p>I chose this recipe for 2 reasons:</p>
<ol>
<li>Buttermilk – I fully believe no waffle or pancake recipe should be made without it. </li>
<li>Mixture of Whole Wheat and White Flour – some semblance of healthy right? </li>
</ol>

<p>As you can see, these waffles were probably a <em>tad </em>too mushy – but I loved them anyway.</p>
<p>Topped with some REAL maple syrup, I savored every bite of my waffles…</p>

<p>I go through donut phases where all I want is a perfectly fresh, chocolate frosted donut.&#160; Or even a chocolate glazed donut.&#160; I’m not picky.&#160; </p>
<p>When I saw <a href="http://www.preventionrd.com/" target="_blank">Nicole’s</a> recipe for <a href="http://www.preventionrd.com/2012/03/whole-wheat-baked-banana-doughnuts-with-chocolate-ganache/" target="_blank">chocolate frosted donuts</a>, I knew I was a gonner.&#160; </p>

<p><strong>Whole Wheat Baked Banana Doughnuts with Chocolate Frosting</strong> adapted from <a href="http://www.preventionrd.com/" target="_blank">PreventionRD</a></p>
<p><u>Doughnuts:</u>    <br />6 Tbsp sugar    <br />1 egg    <br />1/2 cup over-ripe banana, mashed (about 1 1/2 small bananas)    <br />3 Tbsp canola oil    <br />1/2 tsp vanilla extract    <br />1 Tbsp nonfat Greek yogurt    <br />1/4 tsp salt    <br />1/2 tsp baking soda    <br />1/4 tsp baking powder    <br />3/4 cup + 2 Tbsp whole wheat pastry flour    </p>
<p><u>Chocolate Ganache:     <br /></u>3 oz (heaping 1/3 cup) semi-sweet chocolate chips    <br />3 Tbsp Whole Milk</p>
<p>Directions:</p>
<p>Preheat your oven to 350 F, and spray doughnut pan with cooking spray.</p>
<p>Whisk together the egg and sugar until light and pale, about 10 minutes. Stir in the banana, oil, vanilla and yogurt.</p>
<p>Sift in the salt, cinnamon, baking powder, baking soda, flour and wheat germ (or flour). Stir together until combined. Spoon the batter into the prepared doughnut pan, filling wells 1/2 way, and bake for 10-12 minutes.</p>
<p>While the doughnuts bake, put the cream in a microwave-safe bowl and warm for 30-45 second. Pour the cream over chocolate and let it sit for 2 minutes to melt the chocolate. Stir the mixture together. If the mixture is not smooth, microwave for about 10 seconds and mix again. Repeat, if needed.</p>
<p>Remove the doughnuts from the pan and let them cool. Once cool, dip them into the chocolate ganache. Store the doughnuts in an airtight container.</p>

<p>These would be perfect for brunch or a sweet spring treat!</p>
<p>A definite banana flavor these were like banana muffins meet glazed donuts.&#160; A heavenly match in my mind.&#160; </p>
<p>I would actually like to try this recipe again swapping out some of the banana for applesauce…<strike>I just need to get some homework done first.</strike></p>

<p>Simple enough?</p>
<p>Well considering that my picture looks no where near as good as the one on the website, I must conclude that the person took more than the pit out – they must of scraped a considerable amount of avocado out in order to fit the entire egg in.&#160; </p>

<p>After baking our avocado and egg for about 15 minutes we decided to smash this entire mixture onto a piece of toast only to discover the yolk was way over cooked. </p>
<p>If you want avocado and egg for breakfast, I would recommend smashing up the avocado and frying an egg – separately.&#160; </p>
<p>I can pretty much guarantee better results – it couldn’t get much worse than this.&#160; </p>

<p>Well I saw this recipe for Quinoa Pudding and immediately wanted to make it.  I love rice pudding and using quinoa in place of rice would be an interesting twist – plus I still have a lot of quinoa that needs to be used.</p>

<p>1/2 cup quinoa<br />
2 1/2 cups milk<br />
2 eggs<br />
1 vanilla bean – de-seeded<br />
2-3 tbsp maple syrup, to taste<br />
1 pint fresh blueberries, rinsed and picked over<br />
additional milk**</p>
<p>Rinse the quinoa in water, then drain it before adding it to a small pot.  <em><strong>Add 1 1/2 cups of milk reserving 1 cup.</strong> </em>Stir in vanilla seeds and cook for about 20 minutes or until most of the milk has absorbed into the quinoa. You might have to lower the heat a touch and you will definitely have to stir it to keep the milk from burning.</p>
<p>Whisk together the eggs, remaining 1 cup of milk, maple syrup in a small bowl.  When quinoa is finished cooking, slowly stream in a little bit of the quinoa/milk mixture to temper the eggs (stir constantly while doing this).</p>
<p>Then stir the egg mixture into the quinoa and continue stirring it until it thickens, but don&#8217;t allow the mixture to boil as the eggs might curdle. Remove from heat and cool to room temperature.</p>
<p>If pudding is too thick, add a little bit of milk until it thins to desired consistency.</p>

<p>An interesting version of rice pudding.  Next time I would add the full 3 tablespoons of maple syrup (I used 2 1/2 tablespoons) – it needed just a smidge more sweetness.  Or as I tried it for a second time, I added a mashed banana &#8211; perfect amount of sweetness!</p>

<p>Can you see the little specs of vanilla in there?  That’s the best part.</p>
<p>I mixed the pudding with all the blueberries to ensure I had blueberries in every bite.  This would taste even better if the blueberries were more in season.</p>
<p>I have a few more breakfasts worth of quinoa pudding which makes me quite the happy camper.</p>

<p>Anyway, I thought I would try my hand at making my own iced coffee as the weather in Massachusetts has been unseasonably warm.&#160; </p>

<p>The secret to my iced coffee was the vanilla syrup.&#160; Trust me.&#160; </p>

<p><a href="http://www.nytimes.com/2007/06/27/dining/276drex.html">Cold Brewed Iced Coffee</a></p>
<p>1/3 cup ground coffee (medium-coarse grind is best)   <br />Milk (optional).</p>
<p>1. In a jar, stir together coffee and 1 1/2 cups water. Cover and let rest at room temperature overnight or 12 hours.</p>
<p>2. Strain twice through a coffee filter, a fine-mesh sieve or a sieve lined with cheesecloth. In a tall glass filled with ice, mix equal parts coffee concentrate and water, or to taste. If desired, add milk.</p>
<p>Yield: Two drinks.</p>
<p>NOTE: To make hot coffee, dilute concentrate one-to-one with water and heat in the microwave.</p>

<p>Make sure you start this process the night before you want your iced coffee – it needs to sit at least overnight!&#160; I doubled the recipe so I would have lots of iced coffee.</p>

<p>After plunging, with my french press, I strained my coffee one more time using a coffee filter in a small strainer – I wanted to make sure all the coffee grinds were out.</p>

<p>Also, before going to bed, make your vanilla syrup so everything is ready to go in the morning.</p>

<p>Then add your desired amount of coffee and creamer/milk (or in my case chocolate milk).&#160; I stirred in 2 teaspoons of my vanilla syrup and then added ice.</p>

<p>3 1/2 cups rolled oats    <br />2 cups puffed rice cereal (I used <a href="http://www.attunefoods.com/products/Erewhon/erewhon-crispy-brown-rice-gluten-free-cereals" target="_blank">Erewhon Crispy Brown Rice</a>)     <br /><strike>1 tsp ground cinnamon      <br />1 tsp ground ginger       <br />pinch ground cardamom       <br /></strike>3/4 tsp salt     <br />3/4 cup brown sugar     <br />3/4 cup plain applesauce     <br />1/4 cup maple syrup or honey     <br />1 tsp vanilla extract     <br /><strike>up to 1 1/2 cups chopped nuts      <br /></strike>up to 1 cup dried fruit</p>
<p>nut suggestions: almonds, walnuts, pecans, hazelnuts, cashews, macadamia nuts, pumpkin seeds, etc    <br />dried fruit suggestions: cranberries, raisins, apricots, cherries, blueberries, raspberries, etc.</p>
<p>Preheat the oven to 325F and line a large baking sheet (or two smaller sheets) with parchment paper.    </p>
<p>In a large bowl, combine oats, puffed rice cereal, and spices. In a medium bowl, whisk together sugar, applesauce (do not use chunky applesauce), maple syrup and vanilla. Pour wet ingredients into dry ingredients along with chopped nuts and stir to combine. Spread on prepared baking sheet(s) in an even layer.     </p>
<p>Bake for 30 minutes, then turn over the granola carefully using a large wide spatula, and bake for additional 15 minutes, until crisp and golden. Depending on the size of your baking sheet, the center might not be fully dried if your granola layer is thick, so if necessary remove the edges of the cooked granola to a cooling rack and let the rest cook for another 10-15 minutes until done.     <br />Cool on pan or on a wire rack.     </p>
<p>Break granola up as desired and stir in dried fruit. Store in an airtight container.</p>
<p>Makes about 8 servings, more depending on add-ins</p>

<p>I used all maple syrup in this recipe but next time I would use half maple syrup and half honey.&#160; The maple flavor was a little too much for me.&#160; For the dried fruit, I used craisins and dried cherries.&#160; </p>

<p>Breakfast Stromboli</p>
<p>Ingredients:</p>
<ul>
<li>pizza dough (you can buy some at your grocery store but I made mine at home using 1/2 whole wheat flour and 1/2 bread flour) – do whatever is easiest for you!</li>
<li>4 eggs – lightly beaten</li>
<li>1 egg white + some to brush on top</li>
<li>2 handfuls of fresh spinach</li>
<li>1 package of mushrooms broken into pieces</li>
<li>1/2 pint of cherry tomatoes – cut into 1/4s</li>
<li>cheese – I used a combo of montery jack and cheddar</li>
<li>1 onion – chopped</li>
</ul>
<p>Directions:</p>
<ul>
<li>Heat skillet to medium heat; add onion and mushrooms and sauté for about 5 minutes until cooked</li>
<li>Add spinach and cook until spinach is just about wilted; add tomatoes just to heat through</li>
<li>Add eggs and 1 egg white and stir constantly until eggs are cooked (very much like scrambled eggs).  Season to taste with salt/pepper.  Remove from heat and set aside.</li>
<li>Roll pizza dough relatively thin; make sure it measures approximately 15 inches by 12 inches.</li>
<li>Sprinkle Monterey Jack lengthwise down center of dough, leaving about a 2 1/2-inch border on each side. Spoon egg mixture evenly over cheese. Sprinkle cheddar over egg mixture.</li>
<li>Make 2-inch-long diagonal cuts about 1 inch apart on both sides of dough to within 1/2 inch of filling using a sharp knife or kitchen shears. Arrange strips over filling, alternating strips diagonally over filling. Press ends under to seal.</li>
<li>Brush with egg white. Bake at 425° for 15 minutes or until golden brown (I cooked mine on my pizza stone but I’m sure a baking sheet would be just fine). Let stand 5 minutes. Cut crosswise into slices.</li>

<p>I was very pleased with the end product.</p>

<p>This tasted like a Stromboli – the egg and cheese was very creamy while the veggies made this dish full of flavor.  Plus the whole wheat crust gave some fiber to the meal.</p>
<p>I made this for dinner and served it with a salad, but this would be perfect for a brunch.  It reheats well and makes a ton – Matt and I have had it for 2 meals and there is probably another meal leftover still.</p>

<p>Ingredients:</p>
<ul>
<li>3/4 cup cold buttermilk (I used fat free) </li>
<li>1/4 cup sugar </li>
<li>2 tsp vanilla extract </li>
<li>1 large egg </li>
<li>1 cup all purpose flour&#160; </li>
<li>1 cup white whole wheat flour </li>
<li>1 tbsp baking powder </li>
<li>1/2 tsp salt </li>
<li>3 tbsp chilled butter (must be cold) cut into small pieces </li>
<li>3/4 cup chocolate chips (I used Sunspire Chocolate Chips) </li>
<li>cooking spray </li>
<li>1 large egg white, lightly beaten </li>
<li>1 1/2 tbsp sugar </li>
</ul>
<p>Directions:    <br />Preheat oven to 375°. </p>
<p>Combine the first four ingredients in a medium bowl, stirring with a whisk. Spray baking sheet with cooking spray.    </p>
<p>Combine flour, baking powder, salt, in a large bowl, stirring with a whisk.     </p>
<p>Cut in chilled butter with a pastry blender, or you could use 2 knives, until the mixture resembles coarse meal (I used my food processor to do this).&#160; </p>
<p>Gently fold in chocolate chips. Add milk mixture, stirring just until moist.     </p>
<p>Place dough onto a floured surface and knead lightly four times with floured hands. Form dough into an 9-inch circle onto baking sheet, about 3/4&quot; thick. Using a knife,cut dough into 12 wedges all the way through.</p>
<p>Brush egg white over dough and sprinkle evenly with sugar. Bake until golden, about 18-20 minutes, depending on your oven. Serve warm.</p>

<p>Next time I may add some dried cherries – chocolate and cherries are a great scone combo in my humble opinion.</p>
<p>Honestly, these scones got better with age – and I liked them right out of the fridge.&#160; Odd – I know.&#160; </p>
<p>I am going to freeze the remainder of them for another lazy, weekend breakfast.</p>
<p>Who am I kidding – I never have a lazy weekend!</p>
