<p>Chocolate Chip Coffee Muffins</p>
<h5>Ingredients</h5>
<ul>
<li>2/3 cup <span style="text-decoration: line-through;">whole milk</span> (I used 1%)</li>
<li>5 tablespoons butter, melted</li>
<li>3 tablespoons instant coffee granules</li>
<li>1 1/2 teaspoons vanilla extract</li>
<li>1 large egg, lightly beaten</li>
<li>9 ounces all-purpose flour (about 2 cups)</li>
<li>2/3 cup sugar</li>
<li>1/2 cup semisweet chocolate chips</li>
<li>2 teaspoons baking powder</li>
<li>1/4 teaspoon salt</li>
<li>Cooking spray</li>
</ul>
<h5>Preparation</h5>
<ol>
<li>Preheat oven to 400°.</li>
<li>Combine first 5 ingredients.</li>
<li>Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through salt) in a large bowl; stir well with a whisk. Make a well in center of flour mixture. Add milk mixture to flour mixture; stir just until moist.</li>
<li>Spoon batter into 12 muffin cups coated with cooking spray. Bake at 400° for 18 minutes or until done. Remove muffins from pan immediately; place on a wire rack.</li>

<p>It was love at first bite.  Even Matt loved them even though he doesn’t normally like coffee flavored food.</p>

<p>How does that not look good?</p>
<p>Even though I used the 1% milk, the muffins were still rich and moist.  The coffee flavor was the perfect level – not too weak but yet not too strong.</p>

<p>Matt claims to “not be a fan of muffins” but yet ate two of them straight out of the oven.&#160; In all fairness, I would probably eat something straight out of the oven if it was made while I was relaxing on the couch.&#160; </p>
<p>However, these muffins, he has continued to eat.</p>

<p><i>Makes a dozen muffins</i></p>
<p><i>Adapted from <a href="http://hotpolkadot.com/2011/04/05/play/">Hot Polka Dot</a></i></p>
<ul>
<li>3 large bananas</li>
<li>3/4 cup granulated sugar</li>
<li>1 large egg</li>
<li>1/3 cup unsweetened applesauce</li>
<li>1/2 cup white whole-wheat flour (or whole wheat pastry flour or whole wheat flour) – I used the white whole-wheat flour</li>
<li>1/2 cup all-purpose flour</li>
<li>1/2 cup cocoa powder</li>
<li>1/2 tsp salt</li>
<li>1 tsp baking soda</li>
<li>1 tsp baking powder</li>
<li><strike>1 cup</strike> 1/2 cup semi-sweet chocolate chips</li>
</ul>
<p>Preheat the oven to 375 degrees and position a rack in the center. Line a muffin tin with baking cups and set it aside.</p>
<p>In a large bowl mash the bananas with a fork or potato masher then mix in the sugar, egg and applesauce. Sift the flour, cocoa powder, salt, baking soda and baking powder over the banana mixture. Mix lightly with a rubber spatula to combine. Fold in chocolate chips. The batter should be just moistened but still a little clumpy. Don&#8217;t overmix! </p>
<p>Using a spring-loaded ice cream scoop or spoons, divide the batter between the prepared muffin cups and bake them for about 20 minutes until a toothpick inserted into the middle comes out clean. Transfer them to a rack to cool. Store muffins in an airtight container at room temperature for up to 3 days.</p>

<p>This is a great recipe that used all my just about brown bananas and has served as both a breakfast and dessert treat.&#160; That’s money in my book.&#160; </p>

<p><strong>Ingredients:</strong></p>
<ul>
<li>1 can chickpeas – washed, drained, and skin peeled (optional but will make hummus more smooth) </li>
<li>4 tablespoons soy nut butter </li>
<li>3.5 tablespoons maple syrup </li>
</ul>
<p><strong>Directions:</strong></p>
<p>Blend all ingredients in the food processor until desired consistency.&#160; </p>

<p>This was such a nice change to my normal toast.&#160; I decided not to add the chocolate chips to the hummus so it could be more of a breakfast food however, for a special treat, chocolate chips for breakfast is not the worst idea in the world.</p>
<p>I enjoy this hummus and even though it is tedious to pull the skins off the chickpeas, it does make the hummus smoother.</p>

<p>Dessert hummus is excellent with graham crackers, sliced apples, or eaten with a spoon (especially with the chocolate chips).&#160; </p>
<p>I bet it would also taste great on some pancakes or waffles as well…something for this weekend perhaps!</p>

<p>I love grapefruit – my mother-in-law sent us back from New Jersey at Christmas time with a few grapefruits sent to her from a friend in Florida.&#160; They were amazing.&#160; So sweet and juicy.&#160; I looked into buying more from that grove but they were uber pricy – and cost money for shipping.&#160; </p>
<p>Alas, I am left to purchase the ones I find at the grocery store.&#160; Sadly, it seems I have quite the nack for picking the uber tart grapefruits.&#160; Like <em>make a face it almost hurts your mouth to eat</em>&#160;<em>them</em> grapefruits.     </p>
<p>On Pinterest the other day, I discovered a recipe for broiled grapefruit that looked amazing.&#160; Although I am not the biggest fan of covering a fruit with a pound of sugar, sometimes desperate times call for desperate measures.&#160; </p>

<p>Trim 1/4–1/2&quot; of peel from bottom of each grapefruit half to stabilize the fruit and prevent it from rocking back and forth. Place grapefruit, cut side down, on paper towels to dry for 5 minutes. Invert grapefruit and sprinkle 1 Tbsp. sugar evenly over exposed flesh of each grapefruit half. Using a kitchen torch, heat sugar until melted and beginning to turn dark amber.</p>

<p>Alternatively, preheat broiler. Transfer grapefruit, cut side up, to a rimmed baking sheet lined with foil. Broil grapefruit, watching closely to prevent burning, until the sugar is melted and beginning to turn dark amber, about 8 minutes. Let grapefruit cool before serving.</p>

<p>Not having a kitchen torch, I opted for the broiler method.&#160; </p>

<p>If using the broiler method, make sure to set your oven rack as close to the heating element as possible – that sped up the process considerably.&#160; </p>
<p>Obviously my broiled grapefruit does not look quite as “bruleed” as the one in the picture on the recipe.&#160;&#160;&#160; </p>
<p>Matt and I also had an argument as to when you should cut the grapefruit – we opted for after the draining on paper towel but before the sugar application.</p>

<p>Ingredients</p>
<ul>
<li>2 cups old fashioned rolled oats</li>
<li>1/3 cup light brown sugar</li>
<li>1 teaspoon baking powder</li>
<li><strike>1 tablespoon grated orange zest</strike></li>
<li><strike>1 teaspoon Chinese five spice</strike></li>
<li>1/2 teaspoon salt</li>
<li><strike>1/2 cup walnut pieces, chopped</strike></li>
<li>1 cup sliced strawberries</li>
<li>1/3 cup semi-sweet chocolate chips (I used <a href="http://www.sunspire.com/products/grain-sweetened-dark-chocolate-baking-chips" target="_blank">Sunspire</a>)</li>
<li>2 cups milk (I used skim)</li>
<li>1 large egg</li>
<li>3 tablespoons butter, melted</li>
<li>2 teaspoons vanilla extract</li>
<li>1 ripe banana, peeled, 1/2-inch slices (I used two – they needed to be consumed ASAP)</li>
</ul>
<p>Method</p>
<ol>
<li>Preheat oven to 375°F and generously spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet. </li>
<li>In a large bowl, mix together the oats, sugar, baking powder, <strike>orange zest, Chinese five spice</strike>, salt, <strike>half the walnuts</strike>, half the strawberries and half the chocolate. (Save the other half of strawberries, walnuts and chocolate for the top of the oatmeal). </li>
<li>In another large bowl, whisk together the milk, egg, butter and vanilla extract. </li>
<li>Add the oat mixture to prepared baking dish. Arrange the remaining strawberries, walnuts and chocolate on top. Add the banana slices to the top then pour the milk mixture over everything. Gently shimmy/shake the baking dish to help the milk mixture go throughout the oats. </li>
<li>Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar on top then place back in the oven under the broiler and broil for 20-30 seconds. Serve warm with an extra sprinkle of sugar or drizzle of maple syrup.</li>

<p>I omitted the orange zest because I am not the biggest fan of chocolate and orange; the Chinese Five Spice because I didn’t have any (and chose not to sub with cinnamon which I am also not a fan of – weird I know) and the walnuts in order to avoid an allergic reaction.</p>

<p>This recipe is a major keeper in my book.&#160; </p>
<p>I added the chocolate chips on the top only after I removed the dish from the oven – I wanted them to melt just ever so slightly.&#160; </p>
<p>An amazing recipe – a little sweet.&#160; Next time I would cut the brown sugar just a smidge and maybe even take the chocolate chips off the top.</p>
<p>This dish reheats beautifully – I may make another batch and put it in the freezer for some quick breakfasts once the semester starts.&#160; </p>

<li>1 cup nonfat milk </li>
<li>1 cup (packed) pitted Medjool dates (about 9 ounces) </li>
<li>1/2 teaspoon vanilla extract </li>
<li>2 cups ice cubes   </li>
<p>Purée yogurt, milk, dates, and vanilla in blender until smooth. Add ice cubes; puree until mixture is thick and smooth. Divide between 2 glasses and serve.   </p>

<p>Matt and I didn’t clearly read the directions and added everything to our blender at once – including the ice.&#160; This left our shake a little chunky – but good nonetheless.</p>

<p>This shake also kept me going for HOURS – very filling!</p>

<p>These are definitely not muffins and taste very much like baked oatmeal.&#160; Very banana-y, these are a great recipe to make when you have brown bananas sitting on your counter.&#160; </p>

<p>Although a great use for bananas, I don’t think I would make this recipe again.&#160; </p>

<p>It was love at first sip.</p>
<p>Oddly enough I hate coffee – but add chocolate or give me coffee ice cream and I’m in heaven.&#160; </p>
<p>This drink has been my “treat” every day – a small glassful after breakfast.&#160; It is expensive and pretty high in calories.&#160; </p>
<p>I decided to take matters into my own hand and make my own mocha cappuccino.</p>

<p>Using the chocolate milk that is always in my fridge plus some chocolate protein powder and vanilla I got started.</p>
<p>First I brewed some decaf coffee (I’m pretty much caffeine free) using my Keurig.&#160; To my coffee, I added a heavy splash of vanilla and 1 tablespoon of sugar.&#160; Set that in the fridge to cool.&#160; </p>
<p>When I make my mocha cappuccino, I add 2 oz of cold coffee to a glass and then add 6 oz of chocolate milk and half a scoop of protein powder.&#160; Shake and voila…mocha cappuccino.</p>

<p>Not QUITE as good as the Bolthouse Farm but cheaper and pretty much always at my disposal.&#160; Plus I can make it with decaf coffee which means I can drink it at all times of the day.&#160; </p>
<p>Still a treat – but one within my reach!</p>

<p><b>Sweet Potato Muffins</b>    <br />2 1/2 cups whole-wheat flour (preferably pastry flour)    <br />3/4 cup sugar    <br />2 teaspoons baking powder    <br />1 teaspoon ground ginger    <br />1/4 teaspoon baking soda    <br />1/4 teaspoon salt    <br />1/4 cup melted unsalted butter    <br />1/4 cup vegetable oil    <br />1 cup pureed or mashed cooked sweet potato    <br />1 egg, beaten    <br />1/2 cup buttermilk</p>
<p>Heat oven to 375° F. Grease 12 muffin cups or add paper liners.   <br />Combine flour, sugar, baking powder, ginger, baking soda, and salt.    <br />In a bowl, whisk butter, oil, sweet potato, egg, and buttermilk. Fold wet mixture into the dry; stir until just combined.    </p>
<p>Fill muffin cups three-quarters full. Bake for 20 to 25 minutes.    </p>
<p><b>Banana Nut Variation</b> Reduce sugar to 1/2 cup. Replace sweet potato with 1 cup mashed, very ripe banana; add 1/2 cup chopped walnuts to the batter.    <br /><b>Pumpkin Coconut Variation</b> Replace sweet potato with 1 cup canned pumpkin; add 1/2 cup shredded, unsweetened coconut to the batter.</p>

<p>I’m allergic to coconut so I omitted it – but I did add some chocolate chips because pumpkin chocolate chip is one of my favorite combos.</p>

<p>Sadly, I was disappointed in this recipe.&#160; The muffins had very little flavor – I bet the sweet potato would be better as it is sweeter than the pumpkin.&#160; </p>
<p>I would like to try this recipe again with the pumpkin – or banana variety.&#160; It is a simple recipe that doesn’t require too many ingredients.&#160; </p>
<p>This recipe deserves another try – let me know if you try it with sweet potatoes!</p>

<p>I’m glad I did.</p>
<p>These donuts are VERY dense and cake like – extremely filling (especially if you have two).&#160; </p>
<p>Sadly, the apple cider flavor wasn’t as strong as it was in the batter – however, they did taste like good cake donuts.&#160; </p>
<p>I have another apple cider donut recipe I’m hoping to try next weekend…keeping my fingers crossed!</p>
