Cocoa-Oat Truffles

Makes about 20 truffles

Combine cocoa, oats, dates, almond butter and spices to make these naturally sweet treats.

Ingredients

1 cup rolled oats
1 cup finely chopped pitted dates
1/4 cup unsweetened cocoa powder, divided
1/2 cup almond butter (I used soy nut butter)
2 teaspoons pure vanilla extract
Pinch ground nutmeg
Pinch ground cinnamon

Method

Place oats in the bowl of a food processor and process until finely ground. Add dates, 2 tablespoons cocoa, almond butter, vanilla, nutmeg and cinnamon and process until finely ground and sticking together. Place remaining cocoa powder in a shallow bowl. Roll truffle mixture into balls about 2 teaspoons each, pressing firmly for mixture to stick together. Roll truffles in cocoa powder and chill until ready to serve.

An amazing sweet treat!

Next time, I would either step the cocoa powder on the outside or do a mixture of cocoa powder and powdered sugar.

A great dessert option – or homemade gift for your Valentine!

I sought out a recipe that was <strike>Peanut Butter</strike> Soynut Butter and Banana but then after some deeper consideration, realized it was easier to add soynut butter than chocolate to a muffin. Deep thoughts for a Sunday morning. No?

Matt claims to “not be a fan of muffins” but yet ate two of them straight out of the oven. In all fairness, I would probably eat something straight out of the oven if it was made while I was relaxing on the couch.

However, these muffins, he has continued to eat.

I wonder why?

Makes a dozen muffins

Adapted from Hot Polka Dot

3 large bananas

3/4 cup granulated sugar

1 large egg

1/3 cup unsweetened applesauce

1/2 cup white whole-wheat flour (or whole wheat pastry flour or whole wheat flour) – I used the white whole-wheat flour

1/2 cup all-purpose flour

1/2 cup cocoa powder

1/2 tsp salt

1 tsp baking soda

1 tsp baking powder

<strike>1 cup</strike> 1/2 cup semi-sweet chocolate chips

Preheat the oven to 375 degrees and position a rack in the center. Line a muffin tin with baking cups and set it aside.

In a large bowl mash the bananas with a fork or potato masher then mix in the sugar, egg and applesauce. Sift the flour, cocoa powder, salt, baking soda and baking powder over the banana mixture. Mix lightly with a rubber spatula to combine. Fold in chocolate chips. The batter should be just moistened but still a little clumpy. Don’t overmix!

Using a spring-loaded ice cream scoop or spoons, divide the batter between the prepared muffin cups and bake them for about 20 minutes until a toothpick inserted into the middle comes out clean. Transfer them to a rack to cool. Store muffins in an airtight container at room temperature for up to 3 days.

For me, it was love at first bite.

How could you ignore the chocolate with pieces of banana? If that doesn’t convince you, take a closer look.

This is a great recipe that used all my just about brown bananas and has served as both a breakfast and dessert treat. That’s money in my book.

Matt and I spent almost all day cleaning yesterday. I mean from noon until 6:30 pm. We made some serious progress – we have been cleaning out our apartment one room at a time – all that is left now is our kitchen and 2 closets.

I was looking for a reward for our hard work and I stumbled upon a recipe for a Chocolate Chip Mug Cake that sounded perfect – on the condition that we split it.

Step 1: Break an egg into your mug

Step 2: Add 3 tablespoons brown sugar

Step 3: Toss in 1/3 cup of flour and a tablespoon of softened butter

Step 4: 3-4 tablespoons of mini chocolate chips top it all off

Step 5: Mix your cake together with a spoon.

Step 6: Microwave your cake for 1 1/2-2 minutes, or just until the top center of the cake has set. Serve with a dollop of ice cream and enjoy!

After cooking I took it out of the mug so it was easier to split – as you can see, even 1/2 the cake is a decent amount.

As Matt said, “it tastes microwaved.” Not the best cake I have ever had by any means, but it was quick and had chocolate in it. Sometimes that’s all you need – right?

Matt topped his with vanilla ice cream – but I’m not a fan of ice cream on cake.

All in all…not the best…but not the worst either….

On Saturday, Matt and I went to a pot luck “pre-giving” party celebrating the fall harvest as we head towards thanksgiving season. The theme for the dishes was obviously fall and I decided to bring pumpkin cupcakes – one of our favorite recipes from last fall. Plus it could not be easier.

Check out the Big Red Kitchen for the recipe – it is only two ingredients!

I baked these for approximately 22 minutes and made 14 cupcakes.

So simple and delicious – plus they were a big hit at the party. I’m hoping I can find another excuse to make these again this season.

Ingredients:

Approximately 1/2 cup of Stonyfield Farm Frozen Yogurt – vanilla (I was looking for the Oikos frozen yogurt but couldn’t find it)

3 pumpkin ice cubes (put some canned pumpkin in a freezer tray and freeze for a few hours before making milkshake)

Skim milk (enough to blend to consistency desired)

splash of vanilla

about teaspoon sugar

Blend until smooth!

This smoothie wasn’t as pumpkin-y as I would have liked; next time, I would probably use 4 pumpkin ice cubes. The consistency was perfect – nice and thick and not watery.

Top with some crumbled graham crackers for some added crunch.

This satisfied my craving for a milkshake – I want to try some Stonyfield Farm Chocolate Frozen Yogurt for my next milkshake.

Perhaps a breakfast option as well as dessert?

This recipe would be perfect for a bake sale – nothing says bake sale like Cookie bread to me.

I cannot keep my hands off this bread. Jessica’s recipe is fantastic. Next time you need a sweet treat, keep this recipe in mind.

First I made a loaf of my favorite Whole Wheat Chocolate Chip Zucchini Bread. Next, I made a batch of Vegged-Up Oatmeal Cookies – a recipe my sister sent me. They were an epic disaster. Did not taste good and look horrible. In the trash they went (after a healthy sampling of the batter).

My next zucchini recipe was for Chocolate Zucchini Cake – the only recipe I could find that I had all the ingredients for.

    Print This!

Chocolate Zucchini Cake

Ingredients:
1 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup butter or margarine
1/2 cup vegetable oil
3 eggs
1 tsp. vanilla
1/2 cup buttermilk
2 1/2 cups all purpose flour
3/4 tsp. allspice
3/4 tsp. cinnamon
3/4 tsp. salt
2 tsp. baking soda
4 Tbsp. cocoa
2 1/2 cups grated/shredded zucchini
1 cup mini chocolate chips

Preheat oven to 325 degrees. Grease and flour a 9×13 pan. Cream sugars, butter, and oil. Add eggs, buttermilk and vanilla. Stir to mix. Sift together dry ingredients. Mix all together except chocolate chips. After mixing well, gently fold in chips. Pour into pan. Bake for 45 minutes until toothpick comes out clean when inserted in center. Dust with powdered sugar or a fluffy light frosting.

I used fat free buttermilk, and used 1/4 cup oil and 1/4 cup applesauce to make this slightly more healthy.

This is an amazing chocolate cake recipe. You do not taste the zucchini and it is so moist. It doesn’t need any frosting although I’m sure that would make it even better.

I will definitely make this again – hey its got zucchini in it!

Last year I found this recipe and have not made anything different. Each time you make it, the flavor and texture changes just slightly depending on the zucchini.

I mean, how can you go wrong with bread that has chocolate chips in it?

Whole Wheat Chocolate Chip Zucchini Bread

Ingredients:
¾ cup organic brown sugar
3 tablespoons oil (I used 1 olive & 2 canola)
2 large eggs from free roaming chickens
1 teaspoon vanilla
1 cup organic apple sauce
2 cups whole wheat flour
1 ¼ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
2 cups shredded organic zucchini
½ cup (heaping) organic semi sweet chocolate chips
<strike>½ cup (heaping) walnuts pieces</strike>

Directions:
Preheat oven to 350 degrees

Place first 4 ingredients in a large bowl and mix at low speed until well blended. Then stir in the applesauce.

Combine flour and next 3 ingredients and mix together with a whisk. Add flour mixture to the wet mix, beating until moist. Stir in the zucchini, chocolate chips <strike>and walnuts</strike>.

Spoon batter into loaf pan (coat pan with olive oil) and bake at 350 for about 55 minutes. Check by inserting a wooden toothpick (I used a wooden chopstick) in the center. If is comes out almost clean, it’s perfect.

Chocolate Chocolate Chip Muffins:

Ingredients

7 9/10 ounces all-purpose flour (about 1 3/4 cups) 5 oz all purpose flour, 3.9 oz wheat flour

1/2 cup packed brown sugar

1/4 cup unsweetened cocoa

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 cup warm water

1/4 cup canola oil 1/4 cup Oikos Vanilla Greek Yogurt

1 tablespoon red wine vinegar

1 teaspoon vanilla extract

1 large egg, lightly beaten

1/2 cup semisweet chocolate minichips, divided

Cooking spray

Preparation

1. Preheat oven to 400°.

2. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (through salt) in a large bowl, stirring with a whisk. Make a well in center of mixture. Combine 1 cup water and next 4 ingredients (through egg) in a bowl, stirring well with a whisk. Stir in 1/4 cup minichips. Add oil mixture to flour mixture, stirring just until moist.

3. Place 12 muffin-cup liners in muffin cups, and coat liners with cooking spray. Divide batter evenly among prepared muffin cups. Sprinkle remaining 1/4 cup minichips evenly over batter. Bake at 400° for 15 minutes or until a wooden pick inserted in center comes out clean. Cool for 5 minutes in pan on a wire rack

These muffins are heavenly. Nice and moist without being too dense. Matt couldn’t tell that I had made any substitutions – I call that a victory.

Make sure you spray the insides of your liners – I didn’t do this and they stuck.

These would be a great dessert – with a glass of milk of course.
