<p>They looked heavenly and to be honest, I’m a sucker for anything with chocolate chips on top.&#160; Seriously.</p>

<p><a href="http://www.dashingdish.com/2010/09/triple-chocolate-chunk-muffins/" target="_blank">Triple Chocolate Chunk Muffins</a></p>
<h4>Ingredients</h4>
<p>1 3/4 c oats</p>
<p>3 egg whites</p>
<p>3/4 cup unsweetened cocoa</p>
<p>1/2 cup semi-sweet chocolate chips</p>
<p>1/2 cup unsweetened applesauce</p>
<p>1 tsp. vanilla extract</p>
<p>1/2 cup plain Greek yogurt (or regular plain low fat yogurt)</p>
<p>1/2 tsp cream of tartar (or 1-1/2 Tbsp. vinegar)</p>
<p>1-1/2 tsp. baking powder</p>
<p>1-1/2 tsp. baking soda</p>
<p>1/4 tsp. salt</p>
<p>1 cup hot water</p>
<p>1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tbs stevia</p>
<p>Preheat oven to 350 degrees. Line 2 (12-cup) muffin pans with foil cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.</p>
<p>In a blender, (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.</p>
<p>Place mixture in a bowl and gently stir in chocolate chips. Scoop into prepared muffin pans.</p>
<p>Place in oven and bake for 10-12 minutes or until toothpick comes out clean. Cool before removing muffins from pan.</p>
<p>Servings: 24 muffins</p>
<p>85 calories per muffin (5g fiber, 5 protein, 21 g carbs, 1g sugar)</p>
<ul>
<li>1 3/4 c oats </li>

<li>*Foil cupcake liners, remove the inner paper lining (I say foil, because from experience, paper liners tend to stick to muffins!)</li>
</ul>
<h4>Method</h4>
<ol>
<li>Preheat oven to 350 degrees. Line 2 (12-cup) muffin pans with foil cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside. </li>
<li>In a blender, (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth. </li>
<li>Place mixture in a bowl and gently stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans. </li>
<li>Place muffins tins in the oven for 10 minutes. After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half of the chocolate chips on top of each muffin. </li>
<li>Place the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean. <em>*Note, you could skip this step by putting all of the chips in the batter, and baking the muffins for 12-15 min straight, but this method gives the muffins the traditional ‘VitaTop Muffin’ look with the chocolate chips on top!</em></li>
<li>Cool muffins before removing from pan. ENJOY!!</li>

<p>I had some issues with the baking of these muffins – mine were probably in the oven for about 40 minutes until they reached the level of “minimally raw.”&#160; That could be my oven or something else.</p>

<p>If I make these again, I would reduce the amount of hot water to 1/2 a cup and add water as needed.&#160; The batter was WAY too watery.</p>

<p>These tasted more like a cupcake then a muffin – which didn’t upset me too much.&#160; </p>
<p>I bet topped with some nut butter these would be heavenly. </p>
<p>The remaining muffins are now in my freezer for when I need a quick breakfast or dessert.&#160; I bet they don’t last long.</p>

<p>I saw a recipe for Macaroni and Cheese Soup (that included a fair amount of broccoli which is an instant bonus) and wanted it.&#160; Immediately.&#160; </p>

<p>Not that difficult to make, a little night before prep of vegetable dicing would turn this meal from a weekend dinner to a weeknight meal.&#160; </p>
<p>It will be worth it. </p>

<p><a href="http://www.skinnytaste.com/2012/01/skinny-macaroni-and-cheese-soup-with.html" target="_blank">Macaroni and Cheese Soup</a></p>
<p>Ingredients:</p>
<ul>
<li>4 oz dry elbow macaroni (I used Hodgson Mill Whole Wheat Elbows) </li>
<li>1 1/2 cups onion, chopped </li>
<li>1 large carrot, chopped </li>
<li>1 celery stalk, chopped </li>
<li>2 cloves garlic, minced </li>
<li>1 tbsp butter </li>
<li>2 tbsp flour </li>
<li>2 1/2 cups <a href="http://runleangreen.com/diy-veggie-broth/" target="_blank">Veggie Broth</a> (I used homemade from my crockpot)</li>
<li>1 cup fat free milk </li>
<li>1/2 tsp dry mustard </li>
<li>salt and fresh pepper to taste </li>
<li>2 cups (about 10 oz) broccoli florets, chopped into small pieces </li>
<li>1-1/2 cups shredded sharp cheddar </li>
<li>2 tbsp parmesan cheese</li>
</ul>
<p>Boil pasta in salted water according to package directions for al dente. Drain and set aside.   </p>
<p>Chop onion, carrot, celery, garlic by hand.    </p>
<p>In a large soup pot or dutch oven, melt butter.&#160; Add chopped vegetables and sauté on low heat until soft, about 5 minutes.</p>
<p>Add flour and fresh pepper to the pot and stir until smooth. Slowly add chicken broth, milk, nutmeg and dry mustard powder; whisking constantly.&#160; </p>
<p> Set heat to medium-high until it comes to a boil. Cover and cook on low about 10-15 minutes.</p>
<p>Add broccoli florets, parmesan cheese, and stir well. Adjust salt and pepper to taste.&#160; Cook uncovered until broccoli is cooked, about 5 minutes or more to your liking. </p>
<p>Add cheddar, mixing well until cheese melts and immediately remove from heat. Add cooked elbows and mix well, adjust salt and pepper if needed. Eat right away so the pasta doesn&#8217;t absorb all the broth.</p>

<p>While this soup was cooking, I will admit, I had my fears.&#160; I think I may not have cooked the flour for long enough – so my advice – cook the flour until you think it is done and then cook for another minute longer. </p>
<p>Unless you are a better judge of flour done-ness then I am.</p>

<p>This is what I am going to call an all-in-one dinner.&#160; I think I’ve got all food groups covered in that bowl including a decent serving of veggies from the broccoli, celery and carrots – especially since I went back for seconds.</p>

<li>3T dark chocolate chips</li>

<li>Mix ingredients together and add more maple syrup if desired. </li>
<li>Chill [covered] in the fridge. </li>
<li>Top with chocolate chips. </li>

<p>Matt and I split this for dessert one night but I’m sure this would make a great dip.</p>

<p>Matt said it was a little tart for his liking but I enjoyed the difference in taste from greek yogurt with banana. </p>
<p>Ashley was right – the bites with the chocolate chips were my favorite.&#160; By far.</p>

<p>I bet this would be a great dip for pretzels, cereal (I’m thinking some mini wheats or <a href="http://www.quakeroats.com/products/oat-cereals/oatmeal-squares/brown-sugar.aspx" target="_blank">Quaker Oatmeal Squares</a>), apple slices or pineapple, or even some graham crackers.&#160; </p>
<p>I need to try it again with dippers – I also may add a small spoon full of instant coffee!&#160; Mocha yogurt anyone? </p>

<p>Flowers die (although a potted plant would be nice), chocolate is ok and I’m not the biggest jewelry person.&#160; </p>
<p>Cookies it is then.&#160; </p>

<p>I saw this recipe a few weeks ago and although I have seen many recipes for whole wheat cookies, this one piqued my interest for 3 reasons:</p>
<ol>
<li>use of milk – my FAVORITE chocolate chip cookie recipe has a tablespoon of water in it. </li>
<li>melting the butter before creaming the butter and sugar </li>
<li>a whole lot of brown sugar.&#160; my favorite. </li>

<p>2 sticks unsalted butter    <br />2¼ cups whole wheat flour     <br />1 teaspoon kosher salt     <br />1 teaspoon baking soda     <br />¼ cup sugar     <br />1¼ cups brown sugar     <br />1 egg     <br />1 egg yolk     <br />2 tablespoons milk     <br />1½ teaspoons vanilla extract     <br />2 cups (12 ounces) semisweet chocolate chips</p>
<p>Melt the butter in a heavy-bottom medium saucepan over low heat. Sift together the flour, salt, and baking soda and set aside.</p>
<p>Pour the melted butter in the mixer’s work bowl. Add the sugar and brown sugar. Cream the butter and sugars on medium speed. Add the egg, yolk, 2 tablespoons milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Stir in the chocolate chips. Chill the dough (I chilled for an hour).    </p>
<p>When ready to bake, heat oven to 375F.</p>
<p>Bake for 14 minutes or until golden brown, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool completely and store in an airtight container.</p>

<p>The dough definitely tasted whole wheat.&#160; </p>

<p>But surprisingly…the cookies didn’t taste whole wheaty – they tasted a little nutty.</p>
<p>I am not one of those people who makes a whole wheat cookie to be healthy – honestly I can’t justify the amount of cookies I eat is healthy.&#160; Cookies are cookies – why ruin them?&#160; </p>
<p>I’m not going to lie – I probably ate more of these in 2 days then I want to believe.&#160; They are perfectly chewy and not at all crispy.&#160; </p>
<p>These may be my new go-to recipe.&#160; </p>
<p>I have a new love.&#160; Happy Valentines Day!</p>

<h6><font face="Georgia">Makes about 20 truffles</font></h6>
<p>Combine cocoa, oats, dates, almond butter and spices to make these naturally sweet treats. </p>
<h6><font face="Georgia">Ingredients</font></h6>
<p>1 cup rolled oats   <br />1 cup finely chopped pitted dates    <br />1/4 cup unsweetened cocoa powder, divided    <br />1/2 cup almond butter (I used soy nut butter)    <br />2 teaspoons pure vanilla extract    <br />Pinch ground nutmeg    <br />Pinch ground cinnamon</p>
<h6><font face="Georgia">Method</font></h6>
<p>Place oats in the bowl of a food processor and process until finely ground. Add dates, 2 tablespoons cocoa, almond butter, vanilla, nutmeg and cinnamon and process until finely ground and sticking together. Place remaining cocoa powder in a shallow bowl. Roll truffle mixture into balls about 2 teaspoons each, pressing firmly for mixture to stick together. Roll truffles in cocoa powder and chill until ready to serve.</p>

<p><i>Makes a dozen muffins</i></p>

<ul>
<li>3 large bananas</li>
<li>3/4 cup granulated sugar</li>
<li>1 large egg</li>
<li>1/3 cup unsweetened applesauce</li>
<li>1/2 cup white whole-wheat flour (or whole wheat pastry flour or whole wheat flour) – I used the white whole-wheat flour</li>
<li>1/2 cup all-purpose flour</li>
<li>1/2 cup cocoa powder</li>
<li>1/2 tsp salt</li>
<li>1 tsp baking soda</li>
<li>1 tsp baking powder</li>
<li><strike>1 cup</strike> 1/2 cup semi-sweet chocolate chips</li>
</ul>
<p>Preheat the oven to 375 degrees and position a rack in the center. Line a muffin tin with baking cups and set it aside.</p>
<p>In a large bowl mash the bananas with a fork or potato masher then mix in the sugar, egg and applesauce. Sift the flour, cocoa powder, salt, baking soda and baking powder over the banana mixture. Mix lightly with a rubber spatula to combine. Fold in chocolate chips. The batter should be just moistened but still a little clumpy. Don&#8217;t overmix! </p>
<p>Using a spring-loaded ice cream scoop or spoons, divide the batter between the prepared muffin cups and bake them for about 20 minutes until a toothpick inserted into the middle comes out clean. Transfer them to a rack to cool. Store muffins in an airtight container at room temperature for up to 3 days.</p>

<p>I was looking for a reward for our hard work and I stumbled upon a recipe for a <a href="http://blogs.babble.com/family-kitchen/2011/09/20/chocolate-chip-cookie-dough-mug-cake/?pid=3475#slideshow" target="_blank">Chocolate Chip Mug Cake</a> that sounded perfect – on the condition that we split it.&#160; </p>

<p>Step 1: Break an egg into your mug</p>
<p>Step 2:&#160; Add 3 tablespoons brown sugar</p>
<p>Step 3: Toss in 1/3 cup of flour and a tablespoon of softened butter</p>
<p>Step 4: 3-4 tablespoons of mini chocolate chips top it all off</p>
<p>Step 5: Mix your cake together with a spoon.</p>
<p>Step 6: Microwave your cake for 1 1/2-2 minutes, or just until the top center of the cake has set. Serve with a dollop of ice cream and enjoy!</p>

<p>After cooking I took it out of the mug so it was easier to split – as you can see, even 1/2 the cake is a decent amount.&#160; </p>
<p>As Matt said, “it tastes microwaved.”&#160; Not the best cake I have ever had by any means, but it was quick and had chocolate in it.&#160; Sometimes that’s all you need – right?</p>

<p>Matt topped his with vanilla ice cream – but I’m not a fan of ice cream on cake.&#160; </p>
<p>All in all…not the best…but not the worst either….</p>

<p>On Saturday, Matt and I went to a pot luck “pre-giving” party celebrating the fall harvest as we head towards thanksgiving season.&#160; The theme for the dishes was obviously fall and I decided to bring pumpkin cupcakes – one of our favorite recipes from last fall.&#160; Plus it could not be easier.</p>
<p>Check out the <a href="http://www.bigredkitchen.com/2008/11/two-ingredients-pumpkin-cake-with-apple.html" target="_blank">Big Red Kitchen</a> for the recipe – it is only two ingredients!</p>
<p>I baked these for approximately 22 minutes and made 14 cupcakes.</p>

<p>Ingredients:</p>
<ul>
<li>Approximately <a href="http://www.stonyfield.com/products/stonyfield/frozen/16oz-nonfat-frozen-yogurt/gotta-have-vanilla" target="_blank">1/2 cup of Stonyfield Farm Frozen Yogurt</a> – vanilla (I was looking for the Oikos frozen yogurt but couldn’t find it)</li>
<li>3 pumpkin ice cubes (put some canned pumpkin in a freezer tray and freeze for a few hours before making milkshake)</li>
<li>Skim milk (enough to blend to consistency desired)</li>
<li>splash of vanilla</li>
<li>about teaspoon sugar</li>
</ul>
<p>Blend until smooth!</p>

<p>This smoothie wasn’t as pumpkin-y as I would have liked; next time, I would probably use 4 pumpkin ice cubes.&#160; The consistency was perfect – nice and thick and not watery.</p>
<p>Top with some crumbled graham crackers for some added crunch.&#160; </p>
<p>This satisfied my craving for a milkshake – I want to try some Stonyfield Farm Chocolate Frozen Yogurt for my next milkshake.&#160; </p>

<p>When I saw Jessica’s recipe for <a href="http://www.howsweeteats.com/2011/09/chocolate-chunk-oatmeal-cookie-bread/comment-page-2/#comments" target="_blank">Chocolate Chunk Oatmeal Cookie bread</a> I used my willpower not to go home immediately from work and make it; instead I had to wait a few weeks for some “free time” <strike>or I should be doing reading for school but I’m not</strike>.</p>
<p>This recipe would be perfect for a bake sale – nothing says bake sale like Cookie bread to me.&#160; </p>
