More Days Like This

Last night, Matt and I were discussing breakfast cause we always talk about food and realized we haven’t had Cherry Oatmeal Bake in a long time.  This morning I got up and started whipping it up!  The key to this recipe is to mix all the dry ingredients first and add them to the ramekins – then add the liquid – otherwise you get very uneven contents.

IMG_5993 For some reason I also have to bake this for almost 45 minutes – my oven must be off.

With my Cherry Oatmeal Bake, I had the last Cara Cara orange

IMG_5995After breakfast I did some work (I finished outlining question 1 for my mid-term) and then decided a run was in order.

Check out the sky and the temperature…we haven’t seen weather like this in a long time

I set out with no goal in time or distance.  I ended up running 4 miles – those 4 miles were tough but heavenly at the same time.  I remembered once again why I love to run.  Mother Nature needs to keep this weather in Massachusetts for a few more weeks.

Lunch was next on my eating agenda.  Still having tons of refried bean soup, I decided to turn it into a quesadilla.  Using a Flat Out Wrap, I layered 2 slices of reduced fat cheddar cheese with soup mixed with some extra diced tomatoes.

IMG_5996Into the panini maker for a few minutes  and I had one messy lunch

IMG_5998 It was delicious though – and a great way to turn that soup into something completely different.

For dessert – because everyone needs dessert – I had one diced banana with some Stonyfield Farm Fat Free French Vanilla yogurt and some Back to Nature Chocolate granola.

Balancing Act

I think my body needs sleep.  Badly.  I took a 1 1/2 hour nap yesterday and still managed to be asleep by 11 pm last night – and I slept until 8:30 am this morning.  I am starting to feel better rested – but sleep cuts into my studying/general household responsibilities/spending time with Matt/running.  I am really struggling with finding a balance.

My professors gave us 7 possible questions for our midterm – 2 will be on our test.  This is a LARGE déjà vu for me – my comprehensive exam in grad school was very similar – except it was 14 questions.  According to my planned schedule, I should be working on question 3 – I’m on question 1.

I hope to have question 1 finished tonight before Matt and I head out for our “date” night.  Let’s see how that goes!

For breakfast, I had another Bagel Thin with homemade veggie cream cheese

IMG_5971 As you can see in the upper left corner, I also had a green beverage – one cup oatmilk, one banana and 1 cup of spinach.

IMG_5974For lunch, I made a salad containing broccoli slaw, tomatoes and craisins.  I dressed this salad with a mixture of olive oil, champagne vinegar and a little honey.

IMG_5976 I also had another small bowl of my Refried Bean Soup from yesterday

Back to my outline!  Matt and I are going to Whole Foods and Legal C Bar in Dedham tonight.  What should I get for dinner?

Old Favorites

Matt and I were able to have lunch together before he left for work.  Thinking I was going to have lunch by myself, I had decided to make one of my favorite soups – Matt hates it.  I made it anyway.

IMG_5966It really could not be simpler.  Combine 1 can of refried beans (I used Amy’s Traditional Vegetarian Refried Beans), 1 can of diced tomatoes with mild green chilies and some diced red onion in a saucepan and heat through.  I always sprinkle with a little cheese.

This makes a lot of soup in under 5 minutes.  I have plenty of leftovers that I cannot wait to eat.

For dinner, Matt and I also made another favorite that we haven’t had in quite some time – Savory Oatmeal.

In the bowl was 1/2 cup cooked oats (cooked in water), minced parsley and basil, a few sliced scallions, diced tomato, cheddar cheese and one fried egg.

IMG_5968 Then I cut the egg and it oozed everywhere…

IMG_5970 Both Matt and I LOVE this dish – especially when the egg is cooked just right.  The yolk adds a creaminess to the oatmeal that cannot be duplicated.  This meal is so quick to prepare and clean up – I have a feeling we will be making this more often.

I made some progress on my school work today but not nearly what I had hoped.  I have a feeling my study schedule will be recreated – I think my time estimations were a little low.

Tomorrow we need to take the recycling and then we are going somewhere new for dinner…cannot wait!

2 1/2 more hours…

Long day at work!  It’s 6:45 pm and I’m here for at least another 2 1/2 hours.

For lunch, I had some Vegetable Orzo soup with some parmesan cheese

March 1, 2010 002 There were big pieces of kale in the soup – it tasted much better than it looked.

With my soup, I had a salad with an egg white and chickpeas for some staying power.

March 1, 2010 001Around 4 pm, I broke for a yogurt with granola

March 1, 2010 004I selected the vegetarian burrito for dinner which had rice, black beans and roasted peppers inside

March 1, 2010 006It was a tad bit spicy – my mouth was on fire by the last few bites.

With my burrito, I enjoyed an apple – but forgot to take a picture.

I’ve been very productive day – got a few things off my to-do list.  I’m hoping to  get a little reading in before my 8:30 pm event.

I heart Papa Joe

After learning I have a cavity the dentist, Matt and I went to one of our favorite “restaurants” where I used to live in Bristol, RI.

IMG_5917 It makes the most amazing wraps and pizza.  Matt and I always get the same thing when at Papa Joe’s

IMG_5915 I always get it without the hot pepper rings.

IMG_5913 I mean – could anything be better than this?!?

IMG_5914 I absolutely love this wrap – the flavors are perfect and the calamari is always piping hot.  They make this wrap in pizza form too – which is pretty close to heaven.

Ahhh…Matt and I both savored every bite of this.

After spending some quality time at the eye doctor learning I don’t have a scratched cornea again – hooray – just suffering from very dry eyes.

Matt and I made a simple but comforting dinner – roasted brussels sprouts and Creamy Tomato Mac and Cheese.

I roasted the brussels sprouts at 400 degrees for about  15 minutes – they could have used another 2-3 minutes though.

We cooked up a box of Annie’s Whole Wheat Shells with White Cheddar.  To the cooked pasta (with cheese and milk mixture), we added a can of diced tomatoes (drained) and one wedge of Laughing Cow Light Swiss

I also added some cooked peas to mine!

IMG_5918 I love this way of making Mac and Cheese – jazzes it up – it almost tastes like a penne vodka sauce.

More reading tonight – and packing.  I am off to the Cape for tomorrow and tomorrow night with the students for a retreat.

Sweet Potato Spinach Shell

I stood in the cafeteria today for a good 10 minutes before deciding what to eat.

I decided on combining spinach, one stuffed shell and some sweet potato to make an odd but delicious combo

February 23, 2010 002It was pretty tasty.  The tomato sauce was almost sweet – which gave the sweet potato (which wasn’t the greatest) an extra flavor boost.

I realized that I have not had any fruit today – odd. I will try to fix that situation later.  Perhaps an orange or apple is in my future…

Class tonight – I have packed my Stonyfield Farm Berry Smoothie and a vegetable sandwich (swiss cheese, cucumber, spinach, and tomato) on whole wheat bread.  I eat my sandwich while driving – very safe.

I apologize for not including my Carbon Fast 2010 Suggestion of the Day in my post this morning.  The information is at home so I will try to remember to post it tonight.

Enjoy the rest of your day!

Cookie and Vanilla Frosting

Wanting to take a break from my reading – and realizing that I should probably have some lunch, I decided to make myself a sweet treat.

I followed Tina’s 3 Minute Oatmeal Raisin Cookie Recipe again and used my cookie to top a bowl of Stonyfield Farm Fat Free French Vanilla yogurt.

IMG_5875 This was a great combo – I broke the cookie into tiny pieces and enjoyed a bite of cookie with every scoop of yogurt.  A nice change from my usual yogurt/granola combination.

An idea for a quick breakfast as well…hmmmm….

Carrots, Celery, Cheerios and Cosi

Before Matt and I set out on our errand running marathon, we had a lunch/snack

We started with carrots, celery and soy nut butter – Matt’s peanut butter is pictured too

IMG_5865 Plus some Chocolate Cheerios and milk

IMG_5866 After a stop at BJs and the Verizon Wireless store, Matt and I stopped at Cosi for dinner.

I had the Tomato, Basil, Mozzarella sandwich

IMG_5868 With some more carrots!

IMG_5870 After dinner, we got the make your own S’mores for a treat

IMG_5871 We made it to Target and the grocery store after dinner – now our kitchen is fully stocked for a few days…

Time to hit the books again…a very exciting Saturday!

Lunch at Home

I feel like such a truant – skipping work on a work day.  Alas, I will be making up for it tonight.

I woke up a little while ago from a catnap long nap – my body is not happy with the odd sleeping habits I have been living with lately.  Hopefully I can get back on track this weekend.

For lunch, I heated up a Gardenburger Veggie Burger and a Pepperidge Farm Whole Wheat Deli Flat

IMG_5854 With an orange to round out the meal…

IMG_5852 I finished a load of laundry and now I’m going to read for a hour or so before heading back to work.

Amazing Panini

I went out on a limb today and tried a new panini – I was a bit hesitant because I wasn’t sure if it was going to be spicy or not.  I am so glad I tried it though.  I’m going to get it again tomorrow.

February 18, 2010 001Vegetarian taco panini – refried beans, black beans, rice and cheese.  I microwaved it for 30 seconds to make sure it was nice and hot – our paninis are known for not being cooked through.

I loved the flavors of this.  I am definitely going to be recreating it at home – so simple and easy – and if I recreate it, I can use brown rice for a little extra nutrition!

With my panini, I had some veggies

February 18, 2010 004A little sample plate of some veggies.  Knowing what I am going to have for dinner, I always try to diversify my lunch veggies – that way I am getting more nutrients.

I had plans for a run this afternoon; sadly it isn’t going to happen.  I hit my foot on the corner of the coffee table this morning – the same spot I had surgery a few years ago.  It is on the top of my foot and I am getting a NICE bruise and bump.  I’m wearing my Crocs right now and they even hurt. The thought of a tied sneaker on my foot is not appealing right now.

I will ice it tonight with the hopes that the swelling goes down.

Always something…
