<p>The warm temperatures last week put me in the mood for salads.</p>
<p>I found a way to <em><a href="http://www.theburlapbag.com/2012/03/make-hard-boiled-eggs-in-the-oven/" target="_blank">bake eggs</a></em> to make them hard boiled.&#160; Excuse me?&#160; Bake them?&#160; </p>
<p>Why yes…and it couldn’t be simpler.</p>

<p>Pre-heat your oven to 325-350 and place as many eggs as you want in a mini muffin tin.&#160; Cook for about 30 minutes. </p>
<p>That’s it.</p>

<p>It would be great to hard boil your eggs when cooking something else in the oven – they mini muffin tin doesn’t take up a lot of space.&#160; </p>
<p>Perhaps roasting some vegetables for the week?&#160; Nothing like doing double the work in half the time!&#160; Baking your eggs would also be great when you need a lot of them – I don’t know about you, but getting a big pot of water to boil on my stove takes forever.&#160; This would probably take less time!</p>

<p>I saw a recipe for Macaroni and Cheese Soup (that included a fair amount of broccoli which is an instant bonus) and wanted it.&#160; Immediately.&#160; </p>

<p>Not that difficult to make, a little night before prep of vegetable dicing would turn this meal from a weekend dinner to a weeknight meal.&#160; </p>
<p>It will be worth it. </p>

<p><a href="http://www.skinnytaste.com/2012/01/skinny-macaroni-and-cheese-soup-with.html" target="_blank">Macaroni and Cheese Soup</a></p>
<p>Ingredients:</p>
<ul>
<li>4 oz dry elbow macaroni (I used Hodgson Mill Whole Wheat Elbows) </li>
<li>1 1/2 cups onion, chopped </li>
<li>1 large carrot, chopped </li>
<li>1 celery stalk, chopped </li>
<li>2 cloves garlic, minced </li>
<li>1 tbsp butter </li>
<li>2 tbsp flour </li>
<li>2 1/2 cups <a href="http://runleangreen.com/diy-veggie-broth/" target="_blank">Veggie Broth</a> (I used homemade from my crockpot)</li>
<li>1 cup fat free milk </li>
<li>1/2 tsp dry mustard </li>
<li>salt and fresh pepper to taste </li>
<li>2 cups (about 10 oz) broccoli florets, chopped into small pieces </li>
<li>1-1/2 cups shredded sharp cheddar </li>
<li>2 tbsp parmesan cheese</li>
</ul>
<p>Boil pasta in salted water according to package directions for al dente. Drain and set aside.   </p>
<p>Chop onion, carrot, celery, garlic by hand.    </p>
<p>In a large soup pot or dutch oven, melt butter.&#160; Add chopped vegetables and sauté on low heat until soft, about 5 minutes.</p>
<p>Add flour and fresh pepper to the pot and stir until smooth. Slowly add chicken broth, milk, nutmeg and dry mustard powder; whisking constantly.&#160; </p>
<p> Set heat to medium-high until it comes to a boil. Cover and cook on low about 10-15 minutes.</p>
<p>Add broccoli florets, parmesan cheese, and stir well. Adjust salt and pepper to taste.&#160; Cook uncovered until broccoli is cooked, about 5 minutes or more to your liking. </p>
<p>Add cheddar, mixing well until cheese melts and immediately remove from heat. Add cooked elbows and mix well, adjust salt and pepper if needed. Eat right away so the pasta doesn&#8217;t absorb all the broth.</p>

<p>While this soup was cooking, I will admit, I had my fears.&#160; I think I may not have cooked the flour for long enough – so my advice – cook the flour until you think it is done and then cook for another minute longer. </p>
<p>Unless you are a better judge of flour done-ness then I am.</p>

<p>This is what I am going to call an all-in-one dinner.&#160; I think I’ve got all food groups covered in that bowl including a decent serving of veggies from the broccoli, celery and carrots – especially since I went back for seconds.</p>

<p>This soup had a macaroni and cheese flavor – I honestly think it was the dry mustard that stole the show.&#160; </p>
<p>I cannot wait for the leftovers – this is a great bowl of comfort.&#160; </p>

<p>Ingredients:</p>

<li>Half a large onion – chopped </li>
<li>1 garlic clove – minced (I did 2) </li>
<li>1/2 teaspoon chili powder </li>
<li>1/2 teaspoon cumin </li>
<li>1/4 teaspoon paprika </li>
<li>2 cups veggie broth </li>
<li>1 tablespoon tomato paste </li>
<li>1/2 cup red lentils </li>
<li>1 cup drained, rinsed canned black beans (I used the whole can) </li>
<li>1/4 teaspoon salt </li>
<li>juice of one lime </li>
<li>1/4 teaspoon black pepper </li>
</ul>
<p>Directions:</p>
<p>Sauté onion in a pot on medium heat until soft.&#160; Add garlic, chili powder, cumin and paprika; sauté 1 minute.&#160; Add veggie broth and tomato paste; bring to a boil.&#160; Add red lentils and cook until tender – about 25 minutes.&#160; Partially mash black beans and add to soup along with salt, lime juice and black pepper.&#160; Cook 5 minutes and garnish with cilantro.</p>

<p>I loved this soup.&#160; It was relatively simple and most of the time was just watching the pot cook.&#160; Quite honestly, the lime juice made this soup.</p>

<p>It was extremely hearty and one day I even served it with some <a href="http://eatwholly.com/?gclid=CICVsv_x0q0CFYFx4Aoddy2EnQ" target="_blank">Wholly Guacamole</a>.&#160; This soup reheats well and I bet would be fine in the freezer – I will probably make another batch of this soup for the freezer and also to use some more of the red lentils I bought. </p>

<p><strong>Pepperoni Pizza Puffs</strong>     <br /><em>Makes 12</em></p>
<p>Brought to you <a href="http://www.rachaelraymag.com/recipes/rachael-ray-magazine-recipe-search/budget-recipes/Pepperoni-Pizza-Puffs">by Rachael Ray</a>, for the most part.</p>
<ul>
<li>3/4 cups flour </li>
<li>3/4 tsp baking powder </li>
<li>3/4 cup <strike>1% milk</strike> skim milk </li>
<li>1 egg </li>
<li>1 cup shredded mozzarella cheese (4 oz) </li>
<li><strike>1 cup sliced pepperoni, quartered</strike> 1 handful of mushrooms – chopped </li>
<li>1/2 tsp dried basil </li>
<li>1/2 tsp dried oregano </li>
</ul>
<p>1.&#160; Chop <strike>pepperoni</strike> mushrooms and shred cheese. </p>
<p>2. Whisk together flour and baking powder in a medium bowl.&#160; Whisk together milk and eggs in a separate bowl.&#160; Combine the two, whisking with a fork until combined. </p>
<p>3. Add spices, <strike>pepperoni</strike> mushrooms and cheese.&#160; Stir to combine.</p>
<p>4.&#160; Pour into a greased muffin pan.&#160; I used a 12-muffin pan and filled them about 1/3 to 1/2 of the way, evenly using up the batter.</p>
<p>5. Bake at 375F for 18-20 minutes, or until the pizza puffs begin to brown a bit and a toothpick stuck in the middle of one comes out clean.</p>
<p>Serve warm, with pizza sauce for dipping!</p>

<p>Sadly, I think this is a recipe that needs the pepperoni.&#160; They were bland and kinda boring – I even added a few shakes of garlic powder to the batter before dividing into the muffin tins to try to make up for the lack of spices from the pepperoni.</p>

<p>I topped our pizza puffs with a little bit of pizza sauce which I hoped would give it a little bit more flavor but sadly it didn’t.&#160; </p>
<p>These would be great for an afternoon snack or served as an appetizer as Stephanie did for the meat-lovers in your life.&#160; </p>

<p>From the menu:</p>
<p><em>Grilled Cheese Smelt&#160;&#160; $5.95     <br />Your choice of fresh spinach or sliced tomato melted with cheddar cheese and honey mustard dressing on our homemade whole wheat bread. Athens’ biggest and best grilled cheese sandwich.</em></p>
<p>It was the best grilled cheese.&#160; </p>
<p>On the internet I found a recipe for their legendary honey mustard dressing and made it on Sunday.</p>

<p><a href="http://www.indiadivine.org/audarya/vegetarian-forum/1323996-grit-some-dressings.html" target="_blank">Honey Mustard Dressing – From The Grit</a></p>
<p>6 tablespoons Dijon mustard   <br />1/4 cup cider vinegar    <br />3 tablespoons honey    <br />2 tablespoons water    <br />2 small cloves garlic &#8212; chopped    <br />1 1/2 teaspoons cumin    <br />1/2 teaspoon white pepper    <br />1 cup soybean oil    </p>
<p>Combine all ingredients except oil in blender or food processor and mix well.    </p>
<p>Continue blending while adding oil in a slow, steady stream until smooth and    <br />thick. Use immediately or store tightly covered in the refrigerator for up to 2    <br />weeks.</p>

<p>This honey mustard is amazing – I halved the recipe because I didn’t need that much for a grilled cheese.</p>

<p>I also used homemade whole wheat bread.</p>
<p>If you are looking for either 1) a way to change up a plain old grilled cheese or 2) a new honey mustard dressing – I highly recommend this.</p>

<li>3 tablespoons organic creamy Caesar salad dressing (such as Annie&#8217;s) </li>
<li>2 (4-ounce) whole-grain, onion, or &quot;everything&quot; bagels, split and toasted </li>
<li>1/2 teaspoon black pepper </li>
<li>2 thin red onion slices </li>
<li>1 cup torn or shredded romaine lettuce </li>
<li>1/2 cup (2 ounces) shaved Parmigiano-Reggiano cheese </li>
</ul>
<h5>Preparation</h5>
<ul>
<li>1. Spread dressing evenly on cut sides of bagels. Sprinkle with pepper. </li>
<li>2. Arrange half of red onion, romaine lettuce, and cheese on bottom halves of bagels, and repeat layers. Top with the top halves of bagels. </li>

<p>Being allergic to Everything Bagels, I used plain whole-wheat bagel thins – what I had in the fridge.&#160; I also did not feel like slicing the onion – for a small bagel.&#160; Too much work. </p>

<p>Nothing special.&#160; Matt tasted only the cheese – I tasted only the lettuce.&#160; He said he would try this again with a thicker or flavored bagel – I bet this would taste better with an onion bagel.&#160; </p>
<p>I will say, this was certainly fast.&#160; Nothing special, but if you need dinner quickly, this works.&#160; Next time I would almost try to blend some white beans with the caeser dressing to give this a little more protein – or perhaps add some chicken to make this more of a meal.&#160; </p>
<p>Still, I can’t believe there was a recipe for this in a magazine.&#160; </p>

<p>I asked Matt to create the pasta salad while I was baking on Sunday and this is what he created:</p>
<p>Ingredients:</p>
<ul>
<li>Couple handfuls of spinach – roughly chopped/ripped </li>
<li>Pint of cherry tomatoes, halved </li>
<li>1 red pepper, chopped </li>
<li>Scallions, chopped </li>
<li>Feta cheese </li>
<li>Package of tortellini </li>
</ul>
<p>Dressing:</p>
<ul>
<li>juice of 1 lemon </li>
<li>1 tbsp champagne vinegar </li>
<li>1 tbsp olive oil </li>
<li>Sprinkle of salt </li>
</ul>
<p>Directions:</p>
<p>Cook pasta according to directions.&#160;&#160; After done cooking, rinse under cold water to cool.&#160; Add tortellini and all other salad ingredients.&#160; Mix dressing ingredients together and add to salad.&#160; Toss well.</p>

<p>I went for a short run this morning (although all of my runs recently have been short) – I ran 2.23 miles in 24 minutes.&#160; Today’s run (week 6, day 1 of the couch to 5k) was a five mile run followed by 3 minutes of walking, 8 minute run and three minutes of walking and ending with a 5 minute run.&#160; Before heading out I had a medjool date – and I think I fell in love.&#160; So sweet and delicious.&#160; I had a great run which I’m crediting to the date.&#160; </p>
<p>After my run, I scrubbed our bathroom – Matt has to clean the kitchen tonight – and then enjoyed some brunch.&#160; </p>
<p>A Thomas’s Whole Wheat bagel with two pieces of swiss cheese, lettuce, tomato, cucumber and pickle slices.&#160; Heavenly.&#160; </p>
<p>Plus a side of green bean fries – which weren’t my best.&#160; </p>

			<content:encoded><![CDATA[<script type="text/javascript">embaPub="ab817c9349cf9c4f6877e1894a1faa00";</script><script type="text/javascript" src="http://widget.embedarticle.com/javascripts/embed_cp.js"></script><p></p><div class='embaArticle' style='display:inline'><p>Yesterday at work I was craving some Pasta Fagioli soup – I love pasta fagoli.&#160; This craving was probably brought on with the information that we would have no heat today; I wanted a hot bowl of soup to bring to work for lunch.&#160; Looking up recipes, I found one on the <a href="http://www.vegetariantimes.com/">Vegetarian Times website</a> (which I got a subscription to for Christmas and am eagerly awaiting my first issue to arrive via snail mail).</p>
<p>Here is the recipe: </p>
<p><a href="http://www.vegetariantimes.com/recipes/10183?section=">Pasta e Fagioli Soup</a></p>
<ul>
<li>1 Tbs. olive oil </li>
<li>1 medium-size fennel bulb, finely chopped (about 1 cup) </li>
<li>1 medium-size onion, chopped (about 1 cup) </li>
<li>2/3 cup chopped celery </li>
<li>2 cloves garlic, minced (2 tsp.) </li>
<li>1 tsp. dried oregano </li>
<li><strike>1/4 tsp. red pepper flakes </strike></li>
<li>1 28-oz. can diced tomatoes </li>
<li>1 15-oz. can white beans, drained and rinsed </li>
<li>4 cups low-sodium vegetable broth </li>
<li>1 tsp. salt </li>
<li>8 oz. whole-wheat ditalini or orzo pasta (I used ww elbows)</li>
<li>3 Tbs. chopped fresh parsley</li>
</ul>
<h4>DIRECTIONS</h4>
<ol>
<li>Heat oil in large pot over medium-high heat. Add fennel, onion and celery, and sauté 7 minutes, or until vegetables are softened. Add garlic, oregano and pepper flakes, and cook 1 minute more. Stir in tomatoes and beans, and simmer 10 minutes over medium-low heat. </li>
<li>Add broth, salt and 2 1/2 cups water, and cook 20 minutes, stirring occasionally. Stir in pasta, and cook 10 minutes more, or until pasta is tender. </li>
<li>Sprinkle with parsley, and season with salt and pepper.</li>
</ol>
<p>First this recipe makes a tremendous amount of soup…</p>

<p>It has an amazing flavor.&#160; I have never cooked with fennel before and was afraid it would be a little too licorice-y for me but you could barely taste it.&#160; Cooking the pasta in the soup made it so much less liquidy and much more thick.&#160; For the amount of time I put into this pot of soup, I have got a tremendous amount of leftovers.</p>
<p>I will have lunch for the rest of the week…good thing it is going to be cold out.</p>

<p>On Christmas eve, the check engine light on my car went on.&#160; Lovely.&#160; Interestingly, this was after Matt had driven his broken car to New Jersey just a few days earlier.&#160; Matt’s car is now fine but mine needed a new brake pump which should have arrived at the mechanic today.&#160; We are hoping the car is fixed this afternoon so he can drive back tomorrow.&#160; </p>
<p>When I was trying to leave on Tuesday, we then realized that the driver’s seat in Matt’s car was broken – it wouldn’t lock.&#160; So I drove back on Tuesday with a pillow behind me so I could see out the windshield.&#160; When it rains it pours right?&#160; </p>
<p>I was very anxious to leave on Tuesday because I wasn’t feeling so well.&#160; I hate being sick – especially when I can’t sleep in my own bed and relax on my couch.&#160; I made home just on time because yesterday I woke up feeling horrible.&#160; After sleeping most of the day, I have just a cold now.&#160; </p>
<p>Not eating much yesterday, I am starving today.&#160; I decided to make one of my favorite soups – you only need two ingredients – plus any toppings you may enjoy.</p>

<p>I love Amy’s Refried Beans – plus they are vegetarian.&#160; I bought Green Mountain Salsa for the first time on Tuesday – because I was impressed with the ingredients.</p>

<p>It is a great salsa and may become my new favorite variety.&#160; </p>
<p>Ok to make the soup, empty the can of refried beans into a pot – begin to heat up on medium heat.&#160; Add a few spoonful&#8217;s of salsa and a splash of water to thin it out.&#160; Continue to heat until desired temperature.&#160; </p>
<p>I topped my soup with a little shredded cheese and had some tortilla chips on the side for dipping.</p>
