Last weekend, while having our normal debate of “what to have to breakfast,” I stared at the bananas on my counter and then went to my guilty pleasure, Pinterest, to seek out some options.
I sought out a recipe that was Peanut Butter Soynut Butter and Banana but then after some deeper consideration, realized it was easier to add soynut butter than chocolate to a muffin. Deep thoughts for a Sunday morning. No?
Matt claims to “not be a fan of muffins” but yet ate two of them straight out of the oven. In all fairness, I would probably eat something straight out of the oven if it was made while I was relaxing on the couch.
However, these muffins, he has continued to eat.
I wonder why?
Makes a dozen muffins
Adapted from Hot Polka Dot
- 3 large bananas
- 3/4 cup granulated sugar
- 1 large egg
- 1/3 cup unsweetened applesauce
- 1/2 cup white whole-wheat flour (or whole wheat pastry flour or whole wheat flour) – I used the white whole-wheat flour
- 1/2 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
1 cup1/2 cup semi-sweet chocolate chips
Preheat the oven to 375 degrees and position a rack in the center. Line a muffin tin with baking cups and set it aside.
In a large bowl mash the bananas with a fork or potato masher then mix in the sugar, egg and applesauce. Sift the flour, cocoa powder, salt, baking soda and baking powder over the banana mixture. Mix lightly with a rubber spatula to combine. Fold in chocolate chips. The batter should be just moistened but still a little clumpy. Don’t overmix!
Using a spring-loaded ice cream scoop or spoons, divide the batter between the prepared muffin cups and bake them for about 20 minutes until a toothpick inserted into the middle comes out clean. Transfer them to a rack to cool. Store muffins in an airtight container at room temperature for up to 3 days.
For me, it was love at first bite.
How could you ignore the chocolate with pieces of banana? If that doesn’t convince you, take a closer look.
This is a great recipe that used all my just about brown bananas and has served as both a breakfast and dessert treat. That’s money in my book.

Gooey chocolate and banana muffins, yum! Im not a huge muffin fan either but these are kinda like healthy cupcakes in a way, they look really good. I bet they’d be awesome with some PB spread on top too
