In case yesterday’s Mug Coffee Cake wasn’t enough for you, I have another breakfast recipe to make for your Valentine (or for a great weekend breakfast).
Chocolate Stuffed French Toast
- 4 ounces semisweet chocolate, finely chopped
- 3 ounces neufchatel cheese, at room temperature
- 6 ounces Italian bread, cut on the diagonal into 8 slices ( 1/2″ thick)
- 2 large eggs
- 2 large egg whites
- 1 teaspoon vanilla extract
- 1 tablespoon trans-free margarine (I used Earth Balance)
Directions:
Combine the chocolate and cheese in a small bowl and mix well.
Spread one-fourth of the chocolate mixture on 4 slices of the bread. Top each with a second slice and press lightly to form a sandwich.
Combine the whole eggs, egg whites, and vanilla extract in a medium bowl. Working one a time, dip both sides of each sandwich in the egg mixture and set on a plate.
Melt the margarine in a large nonstick skillet over medium heat. Wait for the foam to subside, then add the sandwiches and cook until golden and cooked through, about 4 minutes per side. Serve hot, topped with a sprinkle of powdered sugar.
I wasn’t sure how this was going to turn out – I tried a sample of the cream cheese and chocolate and wasn’t too impressed.
In the end, the chocolate persevered.
This was a great stuffed french toast recipe. Very rich and indulgent but perfect for a special treat.
The recipe recommends serving this with strawberries (which I bet would be amazing), but instead I went with half a grapefruit. The strawberries were way too expensive this week!
The french toast reminded me of a chocolate stuffed croissant – in an odd way.
