Close to Perfect Pizza

Matt and I spent the afternoon at the grocery store, Target and Hallmark – lots of graduations, birthdays and a holiday (Father’s day) coming up. 

We wanted a simple dinner tonight so we made a family favorite – pizza.  Starting with a homemade crust (made with 1 cup white flour, 1 cup wheat), I topped my pizza with part skim mozzarella cheese, roasted garlic (roasted at 350 degrees for 40 minutes – cut off the top of the garlic and drizzle with olive oil), pizza sauce, tomatoes, mushrooms, and parmesan.

IMG_7063Unfortunately the roasted garlic was not as flavorful as I had hoped – but still, this pizza was delicious!   I had two more similar sized pieces.  The crust was thin and almost crispy – but not too crispy.

I have enough leftover pizza for 2 lunches this week – I cannot wait to enjoy this dish again.
