I spent most of my day catching up on two things on the couch:
- Reading (almost done with my class reading that was due yesterday)
- Sleep – I still have not kicked this cold and was up a lot last night coughing. I think my increased stress level the last few days has prevented my immune system from doing its thing…
For lunch I made a simple tuna sandwich on a Pepperidge Farm Whole Wheat Deli flat and some mixed greens.

Matt graciously cooked dinner while I kept reading. He made Bulgur Pilaf with Two cheeses (the recipe is on the package of Goya Bulgur…sadly I couldn’t find it online). We used to make this all the time but haven’t had it in months – it is nice to rediscover an old favorite.
We enjoyed our bulgur with Lemon Broccolini. Here is the recipe for that:
- 1-2 bunches of broccolini (depends on how much you want)
- salt and pepper to taste
- few cloves of garlic
- 1 fresh lemon
Trim off about 1/2 inch bottom of the broccolini and any excess leaves. Slice the garlic into thin slivers. Place some water in a 2-3 quart sauce pan and season with salt; bring to a boil. Drop in the broccolini for about 2-3 minutes. Remove from the water and shock in cold water to stop the cooking process. Right before serving, place a sauté pan on the stove and spray with cooking spray. Add some butter and sauté the garlic slivers. Sauté lightly then add the broccolini and cook until hot. While the broccolini is sautéing, remove the zest from the lemon and juice. Season the brocollini with salt, pepper and lemon juice and place on platter with lemon zest.
This is an amazing veggie – perfect for company!
I went back for a second serving of broccolini.
While I did the dishes, Matt made some No Pudge Brownies I remembered we had in the cabinet.
After watching an old Brothers and Sisters we had on the DVR, we enjoyed our brownies
These are amazing brownies – so simple – all you add is some yogurt (and chocolate chips in our case)…
Hoping for a little more reading before bed tonight (which I think will be early).
It didn’t really start snowing here until around 5 pm – it is snowing pretty hard now but I don’t think there will be enough to shovel before bed. I think it will be a get up early and dig out the cars for us!
