Remember this delicious looking pie from last night? Well we had more for dessert tonight and I thought I would post the recipe for you!
Ingredients:
- Ready made chocolate pie crust – whatever you can find.
- Approximately 12-16 oz cool whip, thawed – the reduced-fat one works well
- Several large chocolate bars – chocolate is ‘to taste’ – we like it REALLY chocolatey!! Save a small amount of chocolate to shave (vegetable peeler is good, or use your grater) to decorate pie
- Coffee (approx 2 brimming tbs of instant granules or to taste)
Directions:
- Melt the coffee in a TINY amount of water – no more than 2 tbs. We generally use less than that – coffee will be really thick
- Break the chocolate bars into pieces and melt in the microwave (doesn’t take very long at all!)
- Combine the coffee and melted chocolate until as integrated as possible – the coffee may cause the chocolate to change texture
- Fold this mixture into the cool whip
- Decorate with chocolate
Refreeze. Serve frozen, just remove from freezer a few minutes before serving.
How can you resist? I can’t.

Yummm… my mom makes that same pie but uses Nestle’s Crunch Bars instead of chocolate bars. so so good!!
