C’s Favorite Chocolate Pie

Remember this delicious looking pie from last night?  Well we had more for dessert tonight and I thought I would post the recipe for you!

Ingredients:

  • Ready made chocolate pie crust – whatever you can find.
  • Approximately 12-16 oz cool whip, thawed – the reduced-fat one works well
  • Several large chocolate bars – chocolate is ‘to taste’ – we like it REALLY chocolatey!!  Save a small amount of chocolate to shave (vegetable peeler is good, or use your grater) to decorate pie
  • Coffee  (approx 2 brimming tbs of instant granules or to taste)

Directions:

  • Melt the coffee in a TINY amount of water – no more than 2 tbs.  We generally use less than that – coffee will be really thick
  • Break the chocolate bars into pieces and melt in the microwave (doesn’t take very long at all!)
  • Combine the coffee and melted chocolate until as integrated as possible – the coffee may cause the chocolate to change texture
  • Fold this mixture into the cool whip
  • Decorate with chocolate

Refreeze.  Serve frozen, just remove from freezer a few minutes before serving.

How can you resist?  I can’t.

Yummm… my mom makes that same pie but uses Nestle’s Crunch Bars instead of chocolate bars. so so good!!
