Well last night’s dinner was supposed to be Twice Baked Acorn Squash a la HangryPants.
Yesterday morning, I baked the acorn squash (two of them) and also prepared my grains (Trader Joe’s Harvest Blend) and cooked up some lentils to add to the mix.
Last night, after returning from the grocery store, I added the frozen spinach and cheddar cheese and baked for 15 minutes at 350 degrees.
I have made this recipe a few times now so I have stopped measuring things – I just throw everything into a bowl!

I will say, I think this is one of my weaker versions of Twice Baked Acorn Squash – the flavor wasn’t right – I think I needed to add parmesan cheese and more garlic powder.
With my acorn squash, I enjoyed two Little Cuties – I love how the one on the right looks like it is smiling!
I had tentative plans to meet up with a friend for dinner but she is still in Connecticut visiting with family so we will be eating more Twice Baked Acorn Squash for dinner tonight.
I also need to squeeze in a treadmill run before dinner – it is just too cold here today to run outside!

Cheese makes everything better! I just did a recipe with quinoa, acorn squash, and feta… It was just blah. I think its the squash… Definitely not the cooks
that squash still looks good to me!
