Egg 'n’ Cheese Sammie

This morning was a glorious morning – I got to sleep until 7:00 am.  I do LOVE the extra hour of sleep.  My day off from running is much needed and appreciated – my legs are a little sore from the increase in mileage. 

While at the Farmers’ Market on Tuesday, I picked up a small tomato to make a Breakfast Sammie. 

First I coated a small bowl with cooking spray.  In the bowl went 1/4 cup of egg whites.  I microwaved the egg for 30 seconds and then stirred.  Another 15 seconds and this egg was done. 

I put my egg on a toasted Pepperidge Farm Whole Wheat deli flat with a slice of cheddar cheese and tomato.

Perfect Friday breakfast.

We have a concert at school tonight so it will be another late night for me.  After today, only one more day of work until TWO days off.  In the Runleangreen house, Monday has been declared “sit your butt on the couch day” – a day of pure relaxation.

Great sammie! You’re a good food photographer. I’m working on it, but it’s tough.

Thanks Melissa – I am definitely still trying to get better at my food photography. I find the best tool is natural light!
