Last night, while making our dinner for tonight (long prep time), I decided to try to make Edamammus from The Biggest Loser Family Cookbook. I was boiling edamame for the dinner so why not make more and take Edamammus for lunch! I was able to find the recipe here. I enjoyed the Edamammus and would definitely make it again. For lunch I enjoyed it with a pita, apple and baby carrots.
For dessert, I had two pieces of Endangered Species Dark Mint Chocolate.
Now for dinner, edamame was also the star ingredient in Cooking Light’s Bulgar Salad with Edamame and Cherry Tomatoes. I used a little less then the 1/4 cup olive oil – I think I used 2.5 tablespoons. The recipe called for almost 2 hours of “sitting” time, so I made this dish last night with my leftover edamame. Both Matt and I agreed that this dish could be a little more “lemony” – next time I may add more lemon juice, less olive oil – or even some lemon zest.
Cooking Light is one of my favorite magazines – I rip out recipes to try from every issue.
This is my first plateful – I added a little feta cheese to it. I also had another serving – probably about 1/2 that amount.
After dinner, I suggested ice cream. I never suggest ice cream! The other day I was at a farm buying honey and noticed they opened an ice cream window next door. I checked out the flavors and have been thinking about Coffee Oreo ever since. It was such a beautiful night, and we were done with dinner early so the rest is history.

Yum. The edamame salad looks like the taboule salad I make with Quinoa.
