With acorn squash. I have no idea why I have never cooked one of these gems before. I was chatting with my mom this afternoon and she said buys 2 acorn squashes and cooks them both because one is oftentimes not very good – at least she ends up with one good one. I got kinda nervous since the squash was the focal point of my dinner so I stopped on my way home at Hanson Farms and picked up another one.
After seeing acorn squash all over the blog world recently, I decided that after my conference this weekend, I was going to try one.
Heather’s Stuffed Acorn Squash from a few days ago looked delicious so I set out to recreate it.
Instead of using Brown Rice, I used these Harvest Grains Blend from Trader Joe’s – I’ve had it in my cabinet for a while and wanted to give it a try. I cooked 3/4 of a cup of the grains.
I used one 10 oz package of frozen spinach, cheddar and parmesan cheese and I also added lentils for some extra protein.
After roasting the squash in the oven, I tasted to make sure they were ok before adding all other components – they were both amazing. More squash for me!
I combined the mashed squash, spinach, garlic powder, salt, cheese, grains and lentils and then stuffed them back into the shells.
Look how gorgeous this is!
OMG this was amazing – one of my new favorite meals (seems I had a lot of new favorite meals today). Even Matt liked it and said he would eat it again – good thing too – we are having this again on Wednesday night.
As Heather recommended, I wish I had cooked the squash last night – it would have cut dinner prep by a little bit.
I am so upset I waited so long to try acorn squash – I bet the season is close to over.

Yay! So glad you liked it. They keep a long time, so I have stocked up! I have several that have been making my table pretty for awhile.
Agh! I almost got that grain mix at TJ’s last weekend, but decided against it. Oh well, next trip!
I love that cous cous mix! I just made acorn squash for the first time the other night. It was amazing! I stuffed it with quinoa. I like your idea of mashing the squash in with the stuffing and then putting it back in the shell. I’ll try that next time!

You should try both Melissa – chickpeas and brussels sprouts are DELICIOUS!
