Interrupted Sleep

This week I am the administrator on duty for work – that means if there is a student-situation on campus, I get called.  Last night I got called 3 times; fortunately 2 were pretty close together and I was still awake from watching the Olympics Opening Ceremony.  The last one was at 3 am though – I was sound asleep.  Needless to say, I had a rocky night sleep and hope campus is a little quieter today.

Please let me sleep tonight.

Matt is leaving for Boston today for a conference so he was up early.  I decided to make some Baked Oatmeal so he could pack and get ready while breakfast was cooking. 

Inspired by Iowa Girl Eats, I made her Baked Banana Bread Oatmeal

I followed her recipe except I omitted the walnuts.

IMG_5777 What a simple and delicious breakfast!  Couldn’t be easier to make and during the week, it could cook while I’m taking a shower.  I will definitely be making this again. 

The oatmeal was so creamy and the banana added a great sweetness.  The raisins provided a different texture to always keep my mouth guessing. 

I have an exciting day planned – reading, reading and then reflection paper writing.  I have no where to go and hopefully will get the majority of my work done today so I can enjoy Boston tomorrow (I will be joining Matt late tomorrow afternoon and will be at the conference on Monday….)

Sorry about the lack of sleep, Heather – not always the most fun when you’re on duty! That breakfast looks great though! I’m always impressed by your variety of foods! Also, thanks for the connection to Iowa Girl Eats, looks like she has some great recipes to check out as well! I meant to tell you the breakfast pizza earlier this week is another one worth trying!
