Let the Festivities Begin

Matt and I are not the best with keeping up our new Saturday morning breakfast tradition.  We made the executive decision to go out to Chili’s last night for dinner (horrible service and ended up having our meal comped) in exchange for eating breakfast at home this morning.  I did learn one thing – if you ask, Chili’s has a vegetarian menu! 

Matt was at work at 8 am this morning, came home and has to head back in a few minutes.  I have to be at work at 2 pm this afternoon and won’t be home until probably close to 11 pm.  What is today you ask?  Why it is freshman move in day!  The school year has official started…

Instead of going out this morning, we made the Oatmeal pancake recipe from the September 2010 issue of Cooking Light magazine

We didn’t have buttermilk in the apartment, so I made some with 1 cup of skim milk and 1 tablespoon of lemon juice – just let it sit on the counter for a few minutes. 

I tried one first with a little bit of butter and maple syrup

I liked these pancakes – they were very buttery (2 tablespoons of butter in the batter) plus sweet.  The texture was different then a normal pancake –but not in a bad way.

My next two pancakes were topped with 1/2 a banana and Stonyfield Farm Fat Free French Vanilla yogurt

Sounds yummy – good luck to you and Matt today! I will be heading into work soon too. Ready or not, it has begun!

oh the start of school…joy!

and sad about chilis! they def do have a veg menu but i don’t think it’s that great.
