Remember a few weeks ago when I created a new breakfast sandwich? Well I have been thinking about it all week and decided to have it again this morning.
I toasted up a Food for Life English Muffin, spread some soy nut butter on both sides and layered Honeycrisp Apple and sliced banana.
I microwaved the entire sandwich for about 15 seconds to warm the apple and banana up.
Matt and I also split the rest of the apple and banana – no waste here.
Back to work today – my eyes are mostly better but I am going to the eye doctor this morning.
So glad its Friday!

Were you able to take a bite of that sandwich??? Looks tasty and makes me want to buy another bag of apples. I’m still trying to finish my Clementines.
