Matt and I made it home – including a stop at the grocery store – a little after 5 pm today. Perfect amount of time for me to get started on 3 loads of laundry, dinner and some dinner prep for tomorrow.
A few weeks ago, I saw a recipe for Chickpea Tacos on Mama Pea’s blog and made it for dinner tonight.
Please note – the Chickpeas have to marinate for a half hour before cooking. Matt was not pleased with me when I told him dinner wouldn’t be until almost 7 pm. I made a few changes to Mama Pea’s recipe because of my low tolerance for anything spicy.
Roasted Chickpeas Tacos
21 t. chili powder- 1/4 t. garlic powder
- 1/4 t. onion powder
- 1/4 t. dried oregano
1 1/21 1/4 t. ground cumin- 1 t. sea salt
- 1 T. lime juice (I just squeezed the heck out of an entire lime – why measure)
- 2 T. water
- One
1415 oz. can of chickpeas, drained and rinsed - 8 organic taco shells
- Taco trimmings:
shredded cabbage, tomato, guacamole, non-dairy (i.e. Daiya) or organic cheese, etc.Romaine Lettuce, Shredded cheddar cheese, salsa, sour cream, tomatoes, and 1/2 of an avocado
Preheat oven to 375 degrees. In a large bowl, combine chili powder, garlic powder, onion powder, oregano, cumin, salt, lime juice and water.
Add chickpeas and marinate for at least 30 minutes.
Place chickpeas on a baking sheet that has been sprayed with cooking spray covered with parchment paper.
Bake for 20-30 minutes, stirring once during cooking, until chickpeas are slightly crispy.
I was disappointed to find my box of taco shells in taco shell pieces so I decided to throw everything on my plate and make a taco salad. For a dressing, I mixed sour cream and salsa.
Roasted taco flavored chickpeas are delicious. I loved the lime flavor and the hint of spiciness. They really tasted like taco filling and were great in a salad.

This looks delicious! I may very well make these next week. They look really tasty, but I’d probably go with the full amount of spice. Also, I’m more partial to soft tacos – would the chick peas be too mushy in the soft taco or did they still maintain their texture?
What a different recipe. I love it! Sounds great! Thanks for the tip about marinating the chickpeas. That seems like something I would forget to do until I was starving, ready to make dinner!
