After the holidays, I have been craving fruits and vegetables. I know I ate more cookies than carrots the last few days – but that’s what the holidays are for aren’t they?
For dinner tonight, I made one of my favorite sandwiches and even topped it with a treat – avocado.
Layered between a bagel thin was: one slice of swiss cheese, tomato, mixed greens, cucumber and avocado.
Plus some sugar snap peas on the side.
Shower time and then some more reading…I love being able to do some “free reading.”
