Moving Into Fall?!?

Last week, as part of our CSA, we got our first non-summer squash.  I am not sure of the variety but it was definitely more of a fall/winter squash.  I was left with no other choice – make my favorite Twice Baked Summer Squash a la Heather.

I cooked the squash (while I was roasting my chickpeas) and lentils yesterday (I add lentils to Heather’s recipe).  Instead of brown rice, I used Trader Joe’s Harvest blend which is quinoa, orzo and couscous. 

IMG_9269Matt said there was too much spinach in his therefore, I probably ate close to an entire box of frozen spinach tonight.  Could be worse right?  This squash wasn’t meaty or big enough for this dish – I didn’t feel like I got enough squash “innerds”  to taste. 

This dish only makes me more excited for the squashes coming into season soon.

Sadly, the summer is just about over for me.  Students have started to move back to campus.  The end of the summer is so bittersweet…I am excited to see some of the students but that means the start of craziness is coming…

I love fall because it’s FOOTBALL season!!!

Wow this really does remind me of fall, I think I made something similar to this dish last fall…I don’t know if I’m ready for that yet!

Yum! I love squash and will be very happy to have the winter varieties back! That recipe looks wonderful!

I can’t believe the kids are coming back already…but then, it is mid-August. It’s that time of year. It just snuck up on me!
