Valentines Day is about a week away and for the next few days I plan on providing you with some treats and even a dinner that would be perfect for your date (or your friends!).
Matt and I are not ones to celebrate Valentines Day – this year I even have class that night. But if you are celebrating, here is a great recipe to start your day!
Mug Coffee Cake – Prudent Baby
Ingredients:
- 1 tablespoon butter
- 2 tablespoons sugar
- 1/2 an egg (I usually make 2 at once so I split the egg into both mugs)
- 2 tablespoons Greek Yogurt (I used plain Oikos)
- drop or two vanilla
- 1/4 cup Whole Wheat Pastry Flour
- 1/8 teaspoon baking powder
Topping:
- 1 tablespoon butter
- 2 tablespoons Whole Wheat pastry flour
- 1 tablespoon brown sugar
1 teaspoon cinnamonI have a weird aversion to cinnamon
Directions
Soften butter in microwave for 10-15 seconds – don’t melt it! Stir in 2 tablespoons sugar until fluffy and creamy – approximately 30 seconds. Add 1/2 egg, Greek Yogurt and vanilla. Stir to combine.
Add flour and baking powder and mix until well blended.
Now make the topping:
In a separate bowl, combine flour, butter, and brown sugar (cinnamon if desired). Blend with a fork and/or your fingers until crumbly. Add to top of mug.
Microwave for 1 minute. Cook in additional 10 second intervals until done.
Matt and I have been making this for weeks. It is a great weekend treat!
This is a great coffee cake – especially the crumb topping.
I have tried making this recipe subbing out the initial 1 tablespoon butter with applesauce – unfortunately or fortunately in this case, butter is better.
I like that I can have fresh coffee cake in under 10 minutes – and it doesn’t sit in my apartment for very long.
