After seeing Kath make Chelsea’s Mexican Pasta the other day, I knew this was something I wanted to make. Pronto. Fortunately I had all the ingredients in my kitchen (except for some cheese which Matt stopped on his way home from work to pick up).
I followed Chelsea’s recommendation and made the dish with black beans instead of meat and I used all the spices she recommended (no taco seasoning packet). Lastly, I used whole wheat elbow macaroni for my pasta and threw in the remaining red pepper from my salad the other night.
I loved this dish – super simple yet satisfying. I made enough for us to have again Friday night for dinner after returning from Hartford (no excuse to eat out). Matt reminded me again that he does not like elbow macaroni unless it is mac and cheese or a pasta salad. He liked this dish but next time would prefer a ziti or a penne…eh – in my opinion, he gets whatever is in the cabinet!

I kind of agree about the elbows- not that i wouldn’t eat them, but I just would rather something else, elbows are so no satisfying haha

That looks really good. I wish I could get my husband to eat anything with a little Mexican spiciness in it. Salsa? Nope. Black beans? Never! I, on the other hand, would love it!
