If you guessed a frittata, you are correct. Tonight’s new recipe challenge was inspired by Caitlin’s frittata last week.
I consulted How to Cook Everything by Mark Bittman. Unfortunately I couldn’t find the recipe online but it involved eggs and egg whites, swiss, cheddar and parmesan cheese, cherry tomatoes, scallions and basil.
Here are some of my ingredients ready to go in the pan
Cooking up on the stovetop – I cooked it on the stovetop for about 10 minutes and then finished in the oven for another 10 minutes

Along with our frittata, we had homemade blueberry muffins. I had a pint of blueberries that were past their prime – I hate to throw them away so I decided that muffins would be a perfect – especially since I had a new recipe!
I am VERY sad I couldn’t find the recipe for the muffins on line – I got it at the Healthy Living Summit from Stonyfield Farm.
These muffins were probably some of the best blueberry muffins I have ever had. Just look at em!
Lemme tell you – these weren’t even that bad for you!

I also had another piece – probably about 1/2 this size. I have neither made nor consumed a frittata before and I am sorry I waited so long to try. This was so much simpler to make then quiche – and the cooking time was much more favorable for a weekday meal. I enjoyed the combination of flavors I used – the tomato, scallions and basil tasted great together – I can’t wait to experiment with other flavor combinations.
Matt has claimed the remaining frittata for breakfast the next two days – he has to be at work at 7 am so I agreed.
Plus my muffins – I may have had 3 – all with a little butter.
I am so glad we have some more muffins left – I may try to crumble some in some Overnight Oats tomorrow…mmm the possibilities!
That concludes the end of a very successful night 2 of the New Recipe Challenge. Today’s dinner will definitely go in the repeat recipe pile – yesterday’s dinner will not.

Organizing recipes… so glad you asked that one. I’m on the hunt for recipe software that might be good to use. Hoping that one exists that can organize recipes found online and also let you put your own recipes in.
Anyone have any ideas? I’m hoping to ask Santa Claus to leave something by the tree for me and my MacBook Pro…
I used to work as a waitress at a breakfast/lunch place, and we had the BEST frittatas…so good and easy to make! The best part is you can customize them by adding whatever you want to them. I love topping them with salsa and sometimes a little sour cream. Yum!
OOOHHH – I love the idea of salsa and sour cream! Something to keep in mind for next time.
Hey Cindy – I am WAY less high tech then something for my computer. I use a 3-ring binder and sheet protectors! Unfortunately my 3-ring binder has just about exploded and I need some new ideas.
