I perused the cafeteria for a few minutes today before deciding on my lunch. I considered a vegetarian taco wrap (black beans and refried beans), the Vegetable Nacho Bar (the vegetables were soaking in oil though), and the Fresh Mozzarella Parmigiana Panini (Fresh Mozzarella, Roasted Garlic Marinara Sauce, Pizza Cheese and Parmesan Cheese on a Sundried Tomato Tortilla Wrap). The Panini sounded delicious – but a little heavy.
Instead I went with a Stuffed Shell, Sweet Potato (about 1/2) and salad – all mixed together
The salad contained: spinach, red pepper, mushrooms and chickpeas. This was one of my more interesting combinations – don’t know if I would do it again. Perhaps plain pasta would be better. I just couldn’t enjoy the combination of sweet potato and marinara sauce…

oh I LOVE that food combo!! I’m all about combining food. IN fact, I just combined some Trader Joe’s low sodium tomato soup, with lean ground turkey, avocado, red peppers, broccoli, and garlic pepper! Oh man, it was so delicious.
Just today I made a snack “cookie,” and a dinner “cookie” details on my blog! Your combo looks great though!
I make almost that exact salad at whole foods except I don’t do the sweet potato and I use a tiny piece of veggie lasanga. :^)
