Old Mother Hubbard

While at Whole Foods on Friday, I was intrigued to find a Blue Hubbard Squash – have you ever seen one?

November 30, 2009 012After the stuffed Acorn Squash we had a few weeks ago, I wanted to try this recipe again. 

Yesterday I cooked up the Ole Mother Blue Hubbard squash and scooped out the cooked innards for quick meal prep tonight. 

I followed the same recipe I used last time (including adding lentils) and loved it once again.

November 30, 2009 014This squash was much bigger than the acorn squash so I couldn’t finish the entire thing – I ate about 3/4 of this.  The Blue Hubbard was very pumpkin like – I think I liked the acorn squash more, but this was still delicious.  I really have a new love for squash – I am sad the season is almost over.

Have you tried any odd squash varieties this season?

Loving the squash recipes!! Do you know how long you can keep squash before it starts going bad? I know you can store it in a dark place for a while… but any thoughts on how long?

I have no idea how long squash will last – I found this on the web
Pumpkins 2-3 months
Acorn Squash 5-8 weeks
Butternut, turban, buttercup 2-3 months
Hubbard squash 5-6 months
Gourds 3-4 months

If that is true – I will be stocking up now!

It looks like a foggy kabocha! I’ve tried that and butternut and acorn and spaghetti. ALL AMAZING :) Great job stuffing it, Heather!

My aunt had a blue hubbard squash as part of our Thanksgiving centerpiece. It was HUGE! It must have weighed as much as the turkey!

Never heard of that type of squash. I just kept it simple with acorn and spaghetti squashes this year.
