One of My Favorite Fish Dishes

Let me tell you…this is one of my favorite ways to cook fish.  It couldn’t be simpler.  In less then 20 minutes you have a delicious fish dish in the oven.  Here’s how to do it.

Ingredients:

  • Tomatoes – a few depending on their size; if you have big ones, you probably only need 2-3
  • Onion – red are my favorite – probably only 2 or one large ones
  • Fresh parsley and basil
  • fish – I got haddock today – it was on sale for $3.99 pound
  • Italian breadcrumbs
  • Wine, stock or water – whatever you have on hand
  • Olive oil
  • Lemon

Step 1: Slice your tomatoes 1/2 inch thick and layer in a 9×13 pan

IMG_9285These are Jersey tomatoes from my Mother-in-Law’s garden.  There is nothing finer then Jersey tomatoes.  There is just something about them – I can’t even put it into words.

Step 2: Slice onions 1/4 – 1/8 inch thick – layer on top of tomatoes

IMG_9294Step 3: Mince some parsley and basil and sprinkle on top.  Then season with salt and black pepper to taste and drizzle with olive oil.  Pour 1/2 cup of white wine/stock/water over it.

IMG_9297Step 4: Top with fish fillets.  I add a little olive oil to the fish and dust with Italian bread crumbs.  Season again however you would like!  We then squeezed 1/2 a lemon over the entire thing.

IMG_9300Step 5: Cover and bake at 400 degrees for 15 –20 minutes until done.  Cooking time will depend on how thick the fish is. 

Matt and I always eat this dish over whole wheat orzo and sprinkled with parmesan cheese.

IMG_9316Amazing.  So simple and fresh – a perfect summer meal.   Use this recipe and your imagination – different herbs, fish, no breadcrumbs – the possibilities are endless.

With the fish, we had some baby bok choy.  Matt sautéed the stems for about 3-4 minutes; then added 1/2 a cup of water and the leaves and cooked for an additional 10 minutes.

Matt and I made a good chunk of dinner for tomorrow night.  I have some baking projects for tomorrow so I wanted to get a jump start.

I love when I can see steam coming from a dish in a picture…so cool. That fish does look delicious and I am sold on anything that is done in 20 minutes!

What a perfect summer meal!! My mom used to make something very similar to that and it was my treat meal every time I went home!
