Open Can of Pumpkin = Pumpkin Smoothie

A few weeks ago, we purchased the ingredients to make a pumpkin smoothie again – yet never got around to making it.  Today was the day – I opened a can of pumpkin yesterday for oatmeal and decided to see how much more I could use.  In the blender went:

  • 1/2 cup Nasoya Silken Creations Vanilla
  • 1 container Stonyfield Farm Pumpkin Pie Flavored Yogurt
  • Honey
  • Skim Milk
  • 1/2 cup Pumpkin
  • 1/2 cup oatmeal
  • about 2 frozen bananas
  • November 10, 2009 003 I did not go for a run this morning.  My left knee has been sore the past 2 days and I decided to take a break – I don’t want to injure it worse.  Instead, I woke up this morning and iced it.  Hopefully that will help and tomorrow I will be able to resume my training schedule. 

    Today’s edition of Think About it Tuesday:

    The Runleangreen household subscribes to Newsweek magazine.  Although Matt reads it more than I do, I was pleased to see Al Gore on the cover of last week’s issue.  Gore, as you may know, has recently published a sequel to An Inconvenient Truth.  His new book, Our Choice: A Plan to Save the Climate Crisis was released on November 3rd. 

    In the November 9th Newsweek, Gore wrote an article titled “The Plan That Saved the Planet.”    The first two paragraphs struck me:

    “Not too many years from now, a new generation will look back at us in this hour of choosing (talking about climate change) and ask one of two questions. Either they will ask, “What were you thinking? Didn’t you see the entire North Polar ice cap melting before your eyes? Did you not care?”

    Or they will ask instead, “How did you find the moral courage to rise up and solve a crisis so many said was impossible to solve?”

    How do you think these questions will be answered?  Do you think question 1 or 2 will prevail?

    At the rate we are going, I think question one will prevail. It’s sad, but true. It’s crazy how many people I know who STILL don’t recycle, and STILL don’t care about our planet. It makes me sick. Even if what Al Gore says isn’t true, keeping our planet clean is sill important.

    Love the pumpkin smoothie idea!

    I’d like to think that #2 will prevail.

    I took a class called Emerging Environmental Issues. When we discussed global warming, things got really interesting when my prof mentioned that there has always been global warming and cooling throughout Earth’s history. (the Ice Age is the best example of global cooling)

    I think it’s great that there have been so many changes made to preserve our planet. Things aren’t perfect and there’s so much more to do. But with a Glass Half Full attitude, I think that things can continue to be done to ease the environmental crisis.

    (Mmm, a smoothie would be a great way to use my cans of pumpkin. Along with the pumpkin quesadilla Melissa told me out!)

    I think it’s just a shame that the way of life that many in our country expect isn’t working for the planet whatsoever! Until that shifts, I don’t know if we are going to make much progress. :-( Sigh…
