I’ve spent most of my day reading – I’ve read about 1/2 of what is due for Tuesday which I am happy about. Next I plan on working on my reflection paper…
I broke for lunch around 1 pm and found some leftover Superbowl Sunday Crockpot Chili. This is the last of it (well except for the small container in the freezer).
With a little bit of cheddar cheese and sour cream.
I upped the fruit content of lunch by adding a Cara Cara Orange and some grapes. I was interested in this orange when I read the description in the grocery store.
Cara Cara oranges, a type of navel grown in California’s San Joaquin Valley, are available January through April. Their outward appearance is similar to other navels, but their interior is a distinctive pinkish red and has an exceptionally sweet flavor with a tangy cranberry-like zing. Cara Caras are a rich source of Vitamins A and C, fiber and Lycopene. A perfect snack served as wedges, they’re also a colorful addition to beverages or squeezed into a vinaigrette salad dressing
This orange was lacking in the sweet flavor – it was really tart. I have another one in the fridge and I hope it lives up to the description.
After finishing some reading, I decided to take a break for a snack…Tina’s 3 Minute Oatmeal Raisin Cookie has looked interesting, so I thought I would give it a try.
I followed the directions except I subbed chocolate chips for the raisins – I had raisins in my breakfast.
Verdict – Interesting. It is almost pancake like but sweeter – I’m not completely sure it would satisfy a cookie craving for me – but it is a lot healthier. The texture is a little off for a cookie….
I will make this again though – smeared with a little soy nut butter, this is a great snack.

Not jealous of the reflection paper, but that 3-minute cookie has sure piqued my interest!
