Reinventing the Breakfast Sandwich

When you think of the breakfast sandwich, what do you think of?  Eggs?  Sausage? Cheese? Bacon?  My Egg Sammie?

November 5, 2009 008On my run yesterday, I was thinking of food, as I normally do, and created my breakfast today – a new twist on the breakfast sandwich. 

I started with a toasted Food for Life English Muffin and spread some soy nut butter on it.  I then layered sliced Honeycrisp Apple and sliced banana.  I microwaved my sandwich for 10 seconds just to take the chill out of the apple. 

November 19, 2009 002 Delicious!  I loved the mushiness of the banana in contrast with the crunchiness of the apple.  The warm soy nut butter melted on the fruit and was nice and gooey.  I highly recommend this and will be making this again!

WOW that looks amazing! How did you get your mouth over it all?
Lately I have tried new versions of the breakfast cookies. I also have been pairing banana with kiwi and greek yogurt in my PB sandwiches! yum yum

I think of eggs and sausage and cheese when I think of a breakfast sandwich! But really, it doesn’t need the sausage, eggs and cheese is fine :)

LAtely I have been on an oat bran kick! I used to eat cereal and only cereal, not anymore. It’s a nice change.

I love nutbutter and banana sandwiches! So good.
