Today’s lunch was a salad hodgepodge.
In the mix was:
- Romaine Lettuce
- Spinach
- onion
- tomato
- carrot
- red pepper
- 1/2 a sweet potato
- Mac and cheese
- few chickpeas
I love the combo of warm and cold things in my salads. This salad required no dressing of course – that is what the mac and cheese is for – but still allowed me to get a good serving of veggies (lots of colors too).
Matt has a late meeting tonight so I may try some new baking recipes when I get home…wish me luck!
