I got my newest issue of Runner’s World magazine the other day and after a quick flip through, I found a recipe for Mini Salmon Loaves with Salsa.
Now you may be thinking – that doesn’t sound like the greatest Valentine’s day dinner. I agree. However salmon contains DHA, a type of omega-3 fat that “promotes brain health and helps lower blood triglycerides to reduce heart-disease risk.”
Heart Healthy = Valentines Day.
Ingredients:
- 2 5-oz cans wild salmon (drained)
- 1 cup frozen chopped spinach (thawed)
- 1 diced red bell pepper
- 2 tablespoons chopped dill
- juice from 1/2 lemon
- 1/2 cup quick-cook rolled oats
- 2 large eggs
- salt and pepper to taste
Direction:
Combine all ingredients. Divide mixture among 12 lightly greased muffin cups and bake at 375 degrees for 20 minutes. Let cool before unmolding and serve topped with jarred salsa.
I’m not the biggest fan of salmon, but knowing how good it is for me, I try my hardest to find recipes that hide the salmon taste.
This recipe was decent and definitely left some room for some flavor additions. Next time I make this, I would add a little garlic powder for some added spice.
These salmon loaves were chock full of veggies and very simple to make.
I only got 11 loaves out of this recipe but it was still enough for both Matt and I to have dinner and still room for some leftovers.
A great way to get your DHA, these salmon loaves are relatively inexpensive to make (for a salmon recipe) and held together well.
I will be making these again.

I am not the biggest fan of salmon but also try to eat more of it for the health benefits. I think I should give this recipe a try.

These looks wonderful! I am not a huge salmon fan – but considering the health benefits I am always looking for a recipe. I wonder if these would be good cold for lunch. Finding healthy lunch options is not easy either! Thanks for sharing the recipe.
