Salsa Situation Solved

I absolutely love salsa but always hesitate to add it to my salads at work because it is too spicy – I end up adding sour cream to dull the spiciness.  That defeats the purpose of salsa doesn’t it?!?

Today I solved the world’s problems my problem by bringing salsa from home.   In keeping with cafeteria-sponsored Taco Tuesday, I created my own taco salad that included:

  • Romaine Lettuce and Spinach
  • Cucumber
  • Red Pepper
  • Onion
  • Mushrooms
  • Black beans
  • cheddar cheese
  • Sweet potato
  • SALSA

February 2, 2010 002This was an amazing salad – I absolutely loved the salsa – gave this same old same old salad a completely new flavor. 

I will probably do this again next Tuesday!

That salad is really good for you. Lot of great food in there. Love the bright colors as well!

I LOVE cottage cheese on my salads. I might need to bring it back. I also like alfalfa sprouts!

Great way to solve the problem! I would probably do that too, because you’re right, the sour cream does sort of defeat the whole purpose of using the healthier salsa. Sounds like a great salad. I need to start eating more salads soon, I’m getting sick of soup and squash! haha, you know, food jags.
