I love scones. My love for scones probably has something to do with my love for all things muffins and sweet, but for some reason scones have a special place for me in my heart.
With that love, comes a high level of Scone Requirements. I like my scones slightly dry and crumbly with a small level of sweetness. Chocolate chips are a definite bonus and a sprinkling of turbinado sugar on top will send me into a tizzy.
I mean how good does a scone with a cup of coffee sound on a cold winter morning (preferably enjoyed lounging around in my pjs – and not rushing to get get ready for work)?
Perfect for a lazy weekend breakfast…
Skinny Chocolate Buttermilk Scones
Ingredients:
- 3/4 cup cold buttermilk (I used fat free)
- 1/4 cup sugar
- 2 tsp vanilla extract
- 1 large egg
- 1 cup all purpose flour
- 1 cup white whole wheat flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 3 tbsp chilled butter (must be cold) cut into small pieces
- 3/4 cup chocolate chips (I used Sunspire Chocolate Chips)
- cooking spray
- 1 large egg white, lightly beaten
- 1 1/2 tbsp sugar
Directions:
Preheat oven to 375°.
Combine the first four ingredients in a medium bowl, stirring with a whisk. Spray baking sheet with cooking spray.
Combine flour, baking powder, salt, in a large bowl, stirring with a whisk.
Cut in chilled butter with a pastry blender, or you could use 2 knives, until the mixture resembles coarse meal (I used my food processor to do this).
Gently fold in chocolate chips. Add milk mixture, stirring just until moist.
Place dough onto a floured surface and knead lightly four times with floured hands. Form dough into an 9-inch circle onto baking sheet, about 3/4" thick. Using a knife,cut dough into 12 wedges all the way through.
Brush egg white over dough and sprinkle evenly with sugar. Bake until golden, about 18-20 minutes, depending on your oven. Serve warm.
These scones were slightly more muffiny then I prefer but all in all, not a bad recipe.
The sugar sprinkled on top makes all the difference for me.
Who could resist?
Next time I may add some dried cherries – chocolate and cherries are a great scone combo in my humble opinion.
Honestly, these scones got better with age – and I liked them right out of the fridge. Odd – I know.
I am going to freeze the remainder of them for another lazy, weekend breakfast.
Who am I kidding – I never have a lazy weekend!

I am so jealous of your baking abilities. I am horrible at it and always end up swapping baking soda for powder or sugar for salt. It is a disaster!
