Slow Going

It is definitely getting close to the end of the week.  I had a hard time waking up to go for my run this morning.  I trudged out of bed and ate a Fig Newman – big surprise.

November 5, 2009 002I ran 4 miles – today was slower than yesterday.  My legs were tired and I couldn’t quite get into a good rhythm.  I did add a few sprints between telephone poles the last two miles to add some excitement.  I trudged along and returned home ready for a shower. 

For breakfast I had a delicious Egg Sammie. 

In a bowl sprayed with cooking spray went:

  • 1/4 cup Egg Whites
  • diced tomato
  • diced mushrooms
  • scallions

I microwaved this for 30 seconds, stirred and then returned to the microwave for another 15 seconds. 

On a toasted Pepperidge Farm Whole Wheat Deli Flat this went with a piece of reduced fat cheddar cheese and some spinach. 

November 5, 2009 004November 5, 2009 008What a delicious breakfast – very filling and quick to prepare – this maybe took 5 minutes from start to finish. 

What are your favorite egg mix-ins?  I’m always looking for new ideas!

I’m not a big fan of eggs. I usually end up mixing 3 egg whites with half a cup of oatmeal and some cinnamon in the blender to make pancakes. I just can’t stomach scrambled eggs or over easy.

Good job on the run. It’s great that you still went for it even though you were tired :)

I love mixing stuff with my eggs, but mainly LAughing cow cheese, spinach, mushrooms, red peppers, and of course Swiss cheese or cheddar cheese. I also like to mix in meat (chunks of turkey, or fake turkey! or bacon, or fake bacon…). Yum, I want some now!
