Starving in 60 seconds

Tonight I went from 0 to starving in about 60 seconds.  I needed dinner fast and decided that Savory Oats would do the trick.

I cooked 1/2 cup oats in water until done.  When the oatmeal was just about done, I added in some minced spinach.  Foraging through my kitchen, I also found some basil and parsley – I chopped them up and threw them in the bowl with some shredded reduced fat cheddar cheese and diced tomato.  Then I cooked an egg over-easy and added it to the bowl.

November 9, 2009 011I love savory oats.  They are so easy to prepare, inexpensive to make and healthy for you.   I have some ideas for future savory oats – perhaps pizza? 

Even though I haven’t crossed off as much as I had hoped for on my to-do list, it is time for Gossip Girl!

That looks great. I’ve yet to try savory oats. I bet you could make a savory oat cookie as the crust for your pizza!

We just tried savory oats for the first time and loved them!! We did a Mediterranean version – spinach, feta, cucumber, etc… it was delicious!! Do you cook your spinach at all before it goes in? Thanks for a great idea and for a perfect option when we just don’t feel like doing anything complicated!
