Steamy Egg Sandwich with Swiss

Try saying that 5 times fast. 

I saw Maria make an amazing sounding breakfast sandwich while catching up on some blogs.  She used a technique found on Ashley’s blog which really piqued my interest – so I tried it this morning. 

I used one egg and 1/4 cup of egg whites and used a pot lid instead of foil to really steam the eggs.  Similar to Maria, I then made an egg grilled cheese sandwich using some Earth Balance Butter and one slice of swiss cheese.

IMG_8595 I have never tasted eggs so light and fluffy.  They melted in my mouth.  So heavenly – plus the steam method made these cook super quick.  I would say this entire meal took less then 5 minutes to make (minus the time I was heating up the pan). 

I cannot wait to make this for Matt – I bet he will like this variation. 

With my egg sandwich, I had some raspberries and blueberries I picked up at the Farmers Market yesterday.

That looks awesome! I’ve been addicted to egg sandwiches for breakfast made on Ezekiel english muffins, but this just took it to a whole new level! YUM!

Glad you enjoyed. The pour, poke, and spread method makes super easy and fast eggs, I think.
