This morning while cleaning up my breakfast, I was already starting to feel snacky. Not a good sign. In case my snacky feelings continued, I decided to bring in some Cheerios. I feel like a little kid, but these really do the trick. Not too bad nutritional and calorie wise and you can munch on a few at a time.
Plus I still have some for tomorrow!
My tummy was ready for lunch at noon. I milled around the cafeteria and decided to try something new…Sweet Potato Macaroni ‘n’ Cheese Pasta Salad. The mac ‘n’ cheese was fresh when I walked by – something I knew was not so good for me – but I only ate 1/2 the portion and bulked it up with veggies. It didn’t help that I was also craving mac ‘n’ cheese after seeing it on Shannon’s Blog.
On my plate was:
- Spinach
- Mushrooms
- Tomato
- Sweet Potato
- steamed broccoli
Then I added some of the Mac ‘n’ Cheese as dressing.
Result: Healthier Mac ‘n’ Cheese! I really enjoyed this – a different twist on a normal salad – and I got in a lot of veggies! I will definitely be making this again each time I see Mac ‘n’ Cheese on the line.
On the side, I also had some red peppers.
Now I am full and enjoying an afternoon cuppa decaf tea. Back to work!
